(Critical) Some refrigerated, ready-to-eat, potentially hazardous food items found without proper date marking. Once these food items are opened, prepared or removed from freezer they should be clearly marked to indicate the discard date. Critical corrected: at time of inspection discarded some food items (whipped cream, tuna salad, feta cheese, salami) and clearly marked the homemade salad dressing made 3 days ago. All deli meats are grilled with the exception of salami. The deli meat does not need date marking if they reach 165°F when grilled. After menu review these are "some" food items you will need to datemark: cut tomatoes, feta cheese, cole slaw, homemade dressings, hard-boiled eggs, chicken salad, tuna salad, salami, whipped cream, sweet potatoe pie, cheesecake, white beans, macaroni & cheese, green beans, collard greens, mashed potatoes and any other refrigerated, ready-to-eat, potentially hazardous food items including those that are cooked, cooled and reheated to order

(Critical) Potentially hazardous food items found at improper temperature in beverage air 2 door unit on cook line. All potentially hazardous food items shall be maintained at 41°F or below or 135°F or above. Critical corrected: at time of inspection discarded all potentially hazardous food items found at 48°F - 51°F on top and bottom of unit (cut tomatoes, cooked potatoes, several pans of deli meat, tuna salad, feta cheese, sliced cheese, etc). This unit is ordered out of service for the storage of potentially hazardous food items until it is repaired, reinspected and capable of maintaining food at 41°F or below

(Critical) Open cup observed on cook line. Food employees shall drink from a closed beverage container to prevent potential contamination. Critical corrected: at time of inspection open cup removed. Discussed with food employee use of closed beverage containers; for example sipper cup or cup with lid and straw as long as straw is not touched with hands to guide to mouth

(Critical) Some spoiled lettuce found in drawer bottom salad reach-in-cooler. Food shall be safe, unadulterated and honestly presented. Critical corrected: at time of inspection discarded old spoiled lettuce. Please monitor all food items carefully and discard as needed

No sanitizer test kit available to monitor sanitizer concentration. Please provide proper test kits. Facility using chlorine for wiping cloth solution and quaternary ammonium for 3-compartment sink set up. For quat oasis 144 provide qt-10 quat test kit

Some light bulbs found without protection rear kitchen. Please provide light shields with end caps or cover for light fixtures to properly protect light bulbs

Sanitizer concentration in wet wiping cloth solutions too high. Please provide sanitizer in accordance with epa-approved manufacturer's label use instructions

2 door beverage air reach-in-cooler on cook line not maintaining food at proper temperature. Refrigeration shall be capable of maintaining food at 41°F or below at all times. A follow-up inspection will be required once unit has been repaired and capable of maintaining food at proper temperature

Please invert long spoons at front counter near pop dispensing machine so handles facing employee to prevent potential contamination of food-contact end
