(Critical) Observed no sanitizing solution at the automatic dishwasher. The solution bottle is empty. No additional solution is available in the establishment. Proper sanitizing is imperative for reducing potential disease transmission. You are directed to use proper manual warewashing until the automatic dishwasher is fixed. As discussed during the inspection, proper manual warewashing includes washing, rinsing, sanitizing followed by air drying. This item must be corrected within 10 days. A followup inspection will be conducted. ,

Observed floors under coolers and equipment at prep line to have an accumulation of debris. Correct by cleaning now and cleaning these areas on a more frequent basis

(Critical) Observed container of beef broth in upright cooler in front prep area with a use by date of 10/16/10. Also observed containers of rte tuna and chicken salads in ric in front prep area and rte deli meats in upright cooler in back kitchen area with incorrect or no datemark labels. All phf rte foods must be clearly marked with a 7 day consume by datemark label (day 1 is prep/open date) and must be discarded by use by date on container. To correct, please rotate stock more often and properly datemark all rte foods as needed. Pic corrected by discarding beef broth and properly datemarking tuna/chicken salads and deli meats. Critical corrected.

(Critical) Observed pitchers of rte 1/2 & 1/2 creamer and milk in customer self service area (near toaster) in dining room with an internal food temp of 46-52f. Facility is using time as a public health control but pitchers were not marked with a discard time. Also, pic was not aware of formal time control policy that was developed on 11/17/08. If using time instead of temp control for phf, all staff must be aware of and understand the time control policy. All phf must be clearly marked with a 4 hour discard time and a copy of this procedure shall be maintained in the restaurant for review. Creamer and milk were out of temp for 3 hours at time of inspection (facility opened at 7:30 am) so pic corrected by properly labeling discard time on both the creamer and milk. Also, pic was given copy of formal time control policy to keep in establishment. Critical corrected.

Observed plastic single service knives stored with food contact portion pointing up and exposed to possible contamination. To correct, please store all utensils so handle is pointing up and food contact portion of utensil is inverted and protected from possible hand contamination

Observed several old pans on shelf in dishwashing area soiled with a heavy accumulation of scale/rust and debris. Pic stated that facility no longer uses these pans. To correct, please remove all old equipment and clutter from facility as soon as possible

Observed interior of small tabletop oven in coffee area (near cash register) with an accumulation of burnt on food debris. To correct, please clean now and on a more frequent schedule.

Observed interior door gaskets on true upright cooler in back kitchen area with an accumulation of sticky debris. To correct, please clean now and on a more frequent schedule. , observed interior of instant coffee machine on serve line soiled with a heavy accumulation of liquid coffee (coffee is pooling near containers). To correct, please clean now and on a more frequent schedule.
