(Critical) Initially, no probe food thermometer could be located. Someone did find a non-working digital thermometer in an office. They believe the battery is dead. Someone left the church to go and buy a battery

Observed the three compartment sink set up in the following way: soapy water wash, sanitize, rinse. Ensure the sink is set-up to wash with hot soapy water, clean water rinse, and then chlorine sanitizer (50-100 ppm chlorine). Corrected by adjusting the dish washing flow to sanitize after rinsing. In the future, ensure staff are washing dishes from left to right and setting up the sinks as labeled (wash, rinse w/plain water, sanitize w/bleach)

(Critical) Observed the sanitizer concentration to be mixed too strong--the chlorine test paper almost turned black in color. Corrected by providing a fresh sanitizing solution at 75 ppm

Observed the three compartment sink set up in the following way: soapy water wash, sanitize, rinse. Ensure the sink is set-up to wash with hot soapy water, clean water rinse, and then chlorine sanitizer (50-100 ppm chlorine). Corrected by draining the middle and right-hand basins and providing clean water in the middle and chlorine sanitizer in the right-hand basin at 75 ppm

Please ensure staff are using the provided chlorine test papers to verify the chlorine concentration is acceptable (50-100 ppm)

Observed some clean bowls, pitchers and food containers stored in a base cabinet under the three compartment sink drain pipes. Corrected by removing this equipment from the cabinet

Observed a bucket with a wiping towel and sanitizer solution to be stored on a shelf located above a table used in this operation. Corrected by relocating the wiping cloth bucket to another shelf where no table is located below it

Observed the rubber gasket to be leaking on the sanitizing basin of the three compartment sink. Repair by replacing this gasket to be water tight

Observed the commercial soap dispenser for the kitchen to be detached from the wall (was held on by a heavy duty double sided tape). To correct re-mount this dispenser to the wall. As an alternative, you my use a small pump-type soap dispenser bottle.

(Critical) I observed that dishes are being washed and rinsed, but not sanitized. As discussed, all three compartments of the sink must be used. All utensils must be washed, rinsed and then sanitized in a (50) parts per million chlorine solution. This sequence is critical for killing harmful bacteria. Corrected at the time of inspection. The third compartment was set up.
