Observed hand washing sink at the kitchen area with 91 degrees f. Hot water, according to pic carol adams repairs are in process to provide hot water at the kitchen hand sink as required. To correct should provide 100 degrees f. Hot water to encourage proper hand washing at the kitchen hand washing sink
(Critical) Potentially hazardous cold food items, tuna sandwiches and salads with hard-boiled eggs and deli meat found at 52°F- 54°F. Potentially hazardous food shall be maintained at 41°F or below or 135°F or above. Critical corrected: at time of inspection discarded all potentially hazardous food items maintaining >41°F. Employees are picking up food from commissary and transporting to new tech. Both refrigeration units at new tech maintaining at 36°F ambient air temperature. This appears to be an issue with preparation; commissary needs to pre-chill all ingredients including bread and batch food items as necessary to maintain proper temperatures. Recommend placing cold transport bags in walk-in-cooler and providing blue ice or equivalent in bags for transport. Transport time less than 10 minutes (3 miles). Correction will be resolved at the commissary
