(Critical) Small pan of leftover wontons found double stacked on top of prep unit at improper temperature. Potentially hazardous food shall maintain at 41°F or below or 135°F or above. Corrected at time of inspection by discarding small pan of wontons found at 48°F (approximately 15 wontons in pan). In future owner will place leftover wontons in shallow pan uncovered in bottom of reach-in-cooler to cool properly and to maintain at proper temperature once cooled.

(Critical) Observed employees not washing their hands when circumstances required handwashing. Entered facility at the same time employees arrived, employees did not wash hands prior to beginning food preparation. Corrected at time of inspection by interrupting the three food employees in facility to stop and wash their hands properly before beginning food preparation. Discussed with owner when to wash hands and the importance of handwashing. He translated this information to the other two employees. All handwash sinks were properly stocked with hot and cold water at proper temperature and pressure

(Critical) No segregrated area designated for dented cans or recalled food items to be stored. Please set up a permanent segregated area for these items. Corrected at time of inspection by setting up a permanent segregated area for dented cans

(Critical) Some dented cans observed on dry storage shelving unit rear kitchen. Please monitor your cans for dents; discard cans as needed or set aside for return to supplier. Owner has a copy of dented can poster on wall in dry storage area to use as a guideline. Corrected at time of inspection by setting three dented cans aside in designated area away from dry storage shelving unit for credit from supplier

(Critical) Some refrigerated, ready-to-eat, potentially hazardous food items found without proper datemarking. Once opened, prepared or removed from freezer these food items shall be clearly marked with the preparation and/or discard date. Critical corrected: at time of inspection all food items that have been cooked and cooled (sweet and sour chicken, sweet and sour pork, egg rolls, general tso's chicken) clearly marked with preparation date. In addition bean sprouts datemarked. All preparation dates and open date known by owner. Add 6 days to prep date/open date

(Critical) Potentially hazardous food items in 2 door under the counter beverage air reach-in-cooler not maintaining at proper temperature. Critical corrected: at time of inspection discarded all potentially hazardous food items in reach-in-cooler found at 52°F - 54°F; several containers of sweet and sour chicken, pork, wontons, etc. This unit is ordered out of service for the storage of potentially hazardous food until it is capable of maintaining food at 41°F or below. Facility will use 3 door prep unit which is maintaining food at proper temperature until 2 door unit repaired. The temperatures of all your refrigeration units should be checked several times daily

(Critical) Observed small pan of gravy and small pan of wontons double stacked on top of prep unit that had not cooled properly from previous evening. Critical corrected: at time of inspection discarded gravy and wontons found at 46°F; all other food items in insert pans top of unit found at 38°F - 39°F. Discussed with pic to place leftover wontons and gravy in wic uncovered in shallow metal pan. Please monitor to assure proper cooling. Discussed cooling methods for other potentially hazardous food items; appears proper cooling methods in use
