(Critical) In the walk in cooler observed two plastic hotel pans containing whole potatoes cooked about two hours before the inspection. The pic states the potatoes boiled, drained, cooled some and then placed into the covered tubs. The tubs were then placed in the wic stacked one a top the other on a shelf near the door. The internal temperature of potatoes in one tub is 75 degrees f and in the other less full tub the temperature is 62 degrees f. Dense food products like cooked potatoes will not cool properly using this method. Item corrected during the inspection by cutting the potatoes in half and dividing the potatoes into thin layers using additional uncovered containers. The pic states the potatoes should have been cooled this way but may have been rushed because of the lunch crowd. Item corrected

(Critical) In the kitchen observed the handwashing sink utilized for tasks other than handwashing including: 1. Dumping waste from customer glasses returned dorm the dining room 2. Rinsing wiping cloths 3. Rinsing lettuce item corrected during the inspection by educating the owner about using the sink only for handwashing activities. A handwashing sink is to be used only for handwashing

In the kitchen at the main cook line observed the hood filters with a heavy accumulation of grease and grime. Correct by cleaning now and on a more frequent basis

In the kitchen observed a few pieces of unused equipment. One piece, a floor mounted food processor, is located next to the walk in cooler door. Removing this and other pieces of equipment would allow for better storage options in the kitchen. Correct by removing unnecessary and unused equipment

(Critical) Observed the back side of the electric food slicer blade to have food residue on it. This slicer was used earlier today and was cleaned. Corrected by removing the blade guard and the blade for proper cleaning and sanitizing

(Critical) Observed a clear plastic container that was cracked at the bottom corner. Someone tried to repair this crack with a clear glue. Once cracked, these containers cannot be repaired to be smooth and easily cleanable. Corrected by discarding

The wiping towels were stored in a solution of chlorine sanitizer that was too weak. Corrected by adding chlorine to achieve 100 ppm

(Critical) Observed the following foods to be above 41f: sliced and diced deli meat (49 to 54f), and shredded cabbage (54f) in the top of the prep-top cooler, lettuce leaves for sandwiches and kim chi stored out at room temperature. These foods were discarded. Ensure these foods are maintained at 41f and below

(Critical) Observed the following foods to be lacking date marks: two opened containers of feta cheese, hard boiled eggs, gravy (and a sauce/soup?), cooked spinach, etc. Ensure these foods are provided with dates when they are prepared.

Observed a couple of wet wiping towels stored on the counter. Corrected by relocating these towels to the sanitizer pail. Please keep your wet wiping towels stored in the sanitizer solution to prevent bacterial growth between uses

The walk in cooler shelves have some spilled food and mold on them. Thoroughly clean these shelves to remove this build-up

Observed flattened cardboard boxes being used to cover a bottom shelf in the kitchen. Eliminate the use of cardboard for this purpose as it is not easily cleanable and absorbs moisture

(Critical) Some deli meats stored in the prep top portion of the cook line cooler to be 46 to 53f. Corrected by discarding the meat found to be above 46f and relocating the meats at 46f and below to another cooler that is maintaining foods at 39f. The issue appears to be the lack of food pan covers. In the future (during the warm times of the year), maintain pan covers on these containers to prevent the foods from warming up when the top lid to the cooler is opened

Observed the back kitchen screen door to have large gaps at the top and bottom. Modify this screen door to eliminate these gaps and the potential for pest entry

Observed some friends or family members of the owner in the back kitchen area. One of them was scooping her own ice cream. Ensure only your food service employees are allowed in the back kitchen

Observed an uncovered container of hard boiled eggs in the walk in cooler. Corrected by providing a container cover

(Critical) Observed the following rte, phfs in containers without use by dates: open feta cheese, cooked spinach, cooked bean sprouts, several soups and sausage gravy. Begin providing use-by dates for these foods

(Critical) Observed a small container of cooked spinach stored on the counter of the prep cooler to be at 61f. Corrected by discarding. Observed a small container of cooked bean sprouts and three flats of in the shell eggs also stored on the prep cooler counter to be at 44f and 48f, respectively. Corrected by relocating these foods to a reach-in refrigerator

Observed the sanitizer solution for wiping towels to be too weak. Corrected by providing a fresh solution of sanitizer at 100 ppm

(Critical) Observed bare hand contact with ready to eat foods on two occasions by two different food handlers. Toast was handled with bare hands. Corrected by using single use gloves

(Critical) Observed a pan of shredded, cooked potatoes resting on top of the cooking area exhaust hood at 76f. Corrected by relocating the pan of potatoes to the refrigerator. Please ensure your potentially hazardous foods remain under proper temperature control

Observed a shelving unit and the upper portion of the adjacent one door freezer to be dusty. Please clean these surfaces

Observed the non-stick coating on several aluminum cooking pans to be peeling/missing. Either discontinue the use of these pans or find a way to remove the remaining non-stick coating leaving only an aluminum cooking surface

Again observed multiple stacks of coffee filters pre-portioned with coffee grounds to be stored on shelf below the coffee maker. Place these filters in a container or food grade bag to protect them from miscellaneous contamination during storage

Observed worn/damaged floor tiles in the kitchen. Replace with new tiles to provide a smooth and easily cleanable surface that doesn't collect moisture and food crumbs

Again a large tub of boiled and peeled potatoes cooked late this morning were found in a covered plastic tub. Please leave the container cover off or vented to expedite the cooling process

Observed the wall behind the steam table to be soiled with splattered food debris. Please clean this wall now and more frequently in the future

Replace the deteriorating brush used at the cook line for the cooking oil with a commercial pastry brush

Cardboard is being used as a shelf liner under some pots and a small rice cooker on a bottom shelf in the kitchen. Discontinue the use of the cardboard as it is not easily cleanable and it absorbs moisture. Additionally, small insects, if present, may hide in the corrugations.

(Critical) Observed the cook not wash her hands after cracking raw, in-shell chicken eggs. Corrected by the owner discussing this concern with the employee and the employee washing her hands after cracking raw eggs

Observed several areas of the kitchen (the compressor compartment for the cook line prep cooler, on the floor along the wall under the 3 comp. Sink, behind the baking oven/trash can/white low shelf/bench, and under the steam table area) that have an accumulation of dead insects. Please clean these areas now and maintain them clean and dry

Observed several areas of the floor and wall under the three compartment sink to be deteriorated due to water damage and wear and tear over time. Please repair the wall and base coving to eliminathe gaps, and repair floor tile as needed

Observed a large quantity of coffee filters pre-filled with coffee grounds to be stored on the shelf. Please place these filters in a container to protect them during storage

Several out of the way areas are due for a deep cleaning: under the counter where the soda dispenser is located, by the cook line prep cooler, under the three compartment sink, and by the trash can next to the baking oven
