(Critical) Found cooked sausage patties and sliced cheese holding @ 47-48*f in the prep unit. It is noted that the air conditioning was not functioning in the establishment, probably adding to the units' difficulty holding some items at 41*f. Corrected - sausage and cheese was discarded. Other items in unit were holding @ 42*f. During times when the indoor air temperature is high as it was today , prep units generally struggle with cold holding issues. Care should be taken to closely monitor the temperatures of the refrigeration units and precautions taken to help maintain the temperatures of phf items. Ice baths can be used inside the unit to help with temp. Control, while continuing to monitor temps. After hours, pulling the unit further away from the wall to allow more air circulation can help as well

(Critical) Found a blender that was returned to the blender stand dirty. Also found a dirty bagel slicer stored with clean items. Corrected - the blender was removed and taken to be washed. The bagel slicer was thrown away due to it being broken.

(Critical) Found no thin mass needle probe thermometer at establishment. To correct - provide thin mass thermometer within 10 days. Email picture of thermometer in establishment by april 29th, 2013 to: bernbeckd@ewashtenaw. Org

(Critical) Found all three of the establishments food/beverage thermometers to be out of calibration. Corrected - thermometers were calibrated at the time of this inspection. Thermometers should be checked more often to ensure accuracy

(Critical) Found scrambled egg used for breakfast sandwich stored in the upper prep unit, to have something blue/teal in color incorporated in the egg. Corrected - egg was discarded, pan was removed for washing, new scrambled eggs stocked. Care should be taken to inspect stock

Found two of the three floor sinks to be in need of cleaning due to accumulation of grase, dirt and food debris. To correct - clean now and keep on a more frequent cleaning schedule

Found dipper well with scoops being stored but water was not running. Pic corrected by turning water on. Ice cream is a seasonal item that will be discontinued soon

Found container of honey on the self-serve counter with ants in it. Pic corrected by discarding container of honey. Griffin pest control is due to come for service within a day or so. No evidence anywhere else in the establishment. Pic mentioned returning to the use of pre-portioned souffle cups of honey instead

(Critical) Dishmachine not sanitizing properly at time of inspection. Chlorine concentration was measured at 0-10ppm. Chlorine concentration needs to be 50-100ppm at all times. After priming machine for approximately 30-40 seconds concentration was measured at 100ppm. After 3 more cycles, dishmachine was consistently sanitizing at 50-75ppm. Critical violation was corrected at time of inspection, but staff must be monitoring dishmachine and verify with test strips that proper concentrations are maintained. Pic stated that she will be calling gfs for service as well.
