(Critical) Talked to employee and asked how dishes are washed? employee explained that dishes are washed in soapy water, rinsed and rinsed with hot water from faucet. Corrected by educating employee that dishes are to be washed, rinsed and sanitized with quat. Pic then set up the sanitizing compartment of the 3 compartement sink to manufacturer's specification of 200 ppm. Pic has been instructed to monitor and ensure employee are sanitizing dishes after washing and rinsing.
(Critical) Found ready to eat(rte), time/temperature control for safety (tcs) food, sliced turkey, tuna salad, and an opened carton of almond milk without 7 day (day opened/prepared + 6 days) datemark in the 2 door prep top cooler. Pic corrected by providing 7 day datemarks for noted items, and has been instructed to monitor and ensure appropriate items are datemarked.
Found the door of the unisex restroom propped open. To correct keep door closed.
Found a pair of used, single use gloves with food debris on the counter top which are being reused. Pic corrected by discarding use single use gloves and was instructed to discontinue this practice of reusing gloves as single use gloves are to be used for only 1 task.
Found a dishrack of cups which are not being used and a tub of utensils stored on the floor under the prep table shelf. Pic corrected by relocating utensils to a more protected location.
Found wet mop left in the mop wringer of the mop bucket in the mop closet. To correct after cleaning hang mop and allow it to air dry.
Found single use, tin pans used to hold/store fruit on the bottom of the 2 door reach in glass cooler. To correct replace these single use containers with commercial grade pans, which are durable, smooth, and cleanable.
