(Critical) At the handsink at the front counter observed the water supply for both hot and cold water to be shut off. Correct by supplying water to the sink.

Observed the m3 turbo air reach in cooler and an adjacent glass front cooler resting on pallets. The pallets prevent proper access under the equipment for cleaning. Correct by elevating the equipment as outlined above to facilitate cleaning under the equipment. This violation was observed during the last several inspections

Observed the floor under the m3 reach in cooler with an accumulation of grime. Correct by cleaning now and on a more frequent basis

At the ice machine ice bin observed three ice scoops stored in the ice. Ice scoops shall be stored on a clean surface such as the purpose built scoop holder inside the machine or another clean surface. Pic corrected item during inspection by relocating the ice scoop. In the kitchen on a storage shelf observed a large container with two 1 gallon+ size plastic bags each containing frozen raw beef. The beef was set out for thawing. Thawing shall occur as outlined above. Pic corrected by placing the beef in refrigeration. The beef was still mostly frozen solid. Item corrected

Raw animal products shall be stored below and away from ready to eat products to reduce the potential for cross contamination of rte foods with harmful pathogens. (Critical) At the handsink adjacent to the main cook line observed dirty dishes in the sink. Handwashing sinks are for handwashing only. Corrected during inspection by educating pic to only use handwashing sink for handwashing purposes. A sign above the sink clearly identifies the sink as a handwashing sink. Item corrected

(Critical) Observed three bonnet style analog thermometers used for food temperatures not calibrated. Each thermometer indicated a different temperature when placed in the same media. Pic corrected during inspection by calibrating the thermometers in an ice bath. Item corrected

On the main cook line under the fryer and stove observed the floor to have an accumulation food debris. Correct by cleaning the area now and on a more frequent basis to prevent the accumulation of food debris

At the rear kitchen area adjacent to the back door observed missing floor tile and deteriorating raw wood. Correct by repairing the floor so it is smooth and easily cleanable.

Observed the paper towel dispensers to be empty at both the hand washing sink in the kitchen and the hand wash sink and at the front service counter. In the kitchen a roll of disposable paper towel was available sitting on a nearby counter. Correct by providing paper towel for the dispenser.

(Critical) I found two badly dented cans of barley and beans on the storage shelves. As discussed, damaged cans must never be placed into stock, and never be used. They are unsafe. Cans must be inspected for damage on the ends, seams and body before they are ever placed into stock. Corrected at the time of inspection. The cans were thrown out

I observed two jugs of soy sauce sitting on the floor. All food must be protected from contamination. Food must be stored at least six inches off the floor in a clean, dry location.

I observed tin foil being used to line a counter top adjacent to the stove. As we discussed, this is an unsafe practice and must be immediately discontinued. This is because the foil could break up and possibly fail into food. Food must be protected from sources of contamination. Food contamination is a leading cause of food borne illness. Remove the tin foil.

Provide chlorine test strips. Use them to check chlorine sanitizing solutions. Provide fifty parts per million chlorine in the third compartment of the three compartment sink. Provide a wiping cloth sanitizing solution of 50-100 parts per million.
