(Critical) Observed container of commercially processed kefir cheese in prep unit cooler with visible mold and spoilage in food. Use by date of cheese was 7/22/12. All food must be safe and unadulterated at all times. To correct, need to rotate stock more often and discard any food with signs of spoilage or contamination/adulteration. Utensils were used at unknown time of day (today), but were not washed, rinsed and sanitized after use.
