(Critical) Two dented cans of black olives found on the can storage rack. Return to supplier for credit or discard. Establish a separate designated location away from can storage to store cans awaiting return to supplier. Corrected by relocating dented cans to a separate storage shelf away from can storage. In addition three cans of dijon mustard were found with a can that has a slight appearance of bulging lids. Check with supplier to determine if this is normal for this can of if there is a problem with these cans. If so return to the supplier for credit.
Leak from drain under handsink in the rear prep area. Water is dripping into a catch bucket. Repair leak
Thermometers missing from both pop/juice display coolers in the dining area. Provide thermometers for these units in order to monitor the temperatures for these units.
The underside of the drawers below the counter by the pop machine are sticky. Clean now and place on a routine cleaning schedule.
(Critical) The drainlines for both the ice machine and the condensate wasteline for the furnace/ac unit were plumbed to a drain in the basement floor and not air gap. They were pushed down into the drain only providing an airbreak. An airgap is required on both of these drainlines to minimize potential for backsiphonage into the ice and furnace system. At time of inspection they were both temporarily corrected by providing a temporary airgap. However as these drainlines are in the center of the basement floor they pose a trip hazard. It is recommended that you install a pump for these units and pump the discharge to the mop sink via an air gap above the top rim of the mop sink. You can also permanently secure the airgap but it is preferred that you utilize pumps to the mop sink to eliminate the trip hazard.

Potentially hazardous foods must be maintained at 41 degrees f or below. Corrected by relocating ph foods to a cooler that is properly functioning and discarding foods. The unit is ordered out of service for the storage of ph foods. This unit may not be used unless repaired and put back into storage by approval of the health department. It is the understanding of the health department that new display cases (both) are on order and due in next week.
(Critical) The handsink that was previously installed to serve the panini prep/cook and dishwsh area was removed. Only one sink remains at the end of the prep line which is a significant distance away from the panini cook/wrap station. Reinstall the handsink in the same location it was previously ocated to serve the panini cook/wrap area as discussed. The 3c sink that was in this area has been relocated to the back storage area and a handsink was installed in the new location.
The hood filters are in need of cleaning. Clean now and place on a more frequent cleaning schedule.
The thermometer for the small cooler that holds the bottled beverages is missing. The thermoemter for the upright cooler in the rear is broken. Provide thermometers for these units in order to properly monitor the temperatures for these units.

It is the understanding of the inspector that new display cases are on order and due in next week. This unit may not be used unless repaired and approved for use by the health department. Provide cut sheets for the display cases.

The thermometer in the upright display cooler with the pop and the milk at the front door is inaccurate. Replace with a thermometer that is accurate in order to properly monitor the temperature for this unit.
The domestic equipment in the facility including chest freezer, upright freezer in the kitchen, bread maker and rice cooker are not approved. It is the understanding that the bread maker and rice cooker is for personal use, but the rest of the equipment must be replaced with commercial equipment when in need of repair.
The interior of the bottom of the deli display case needs cleaning. Clean now and place on a more frequetn cleaning schedule.
The faucet at the 3c sink is leaking. Repair the leak
Domestic equipment in the facility including chest freezer in basement is not approved. The ice cream freezer is now used for storage of foods including cheeses and chicken. This freezer is not approved for food storage of those foods. Provide domestic equipment and nsf approved equipment for it's intended use when in need of repair.
There is a star pro max grill/sandwich melter in the facility and a back up star pro max which is only in use sometimes. Ventilation is inadequate for the use of the unit. Ventilation is required as wall and ceiling are coated with grease and stained. Contact al hauck regarding ventilation requirements and any proposed equipment changes.
Domestic chest freezer in the basement is not approved. Replace with commercial unit when in need of repair.
