(Critical) Observed the hot water sanitizing dish machine not reaching the proper temp for sanitation. Note: strip did not turn black. After being cleaned, equipment food-contact surfaces and utensils shall be sanitized in: (a) hot water manual operations by immersion for at least 30 seconds and as specified under # 4-501. 111; (p) (b) hot water mechanical operations by being cycled through equipment that is set up as specified under ## 4-501. 15, 4-501. 112, and 4-501. 113 and achieving a utensils surface temperature of 71�c (160�f) as measured by an irreversible registering temperature indicator; (p) to correct have the noted machine repaired. ,
Observed the three compartment sink in the back roasting room to have a leak at the faucet when turned on. A plumbing system shall be: (a) repaired according to law;(p) and (b) maintained in good repair. To correct repair the noted faucet to eliminate the leak.
Observed the following not sealed to the wall: 1. Hand sink in the front service area. 2. Parts of the three compartment sink in the front service area. Equipment that is fixed because it is not easily movable shall be installed so that it is: (1) spaced to allow access for cleaning along the sides, behind, and above the equipment; (2) spaced from adjoining equipment, walls, and ceilings a distance of not more than 1 millimeter or one thirty-second inch; or (3) sealed to adjoining equipment or walls, if the equipment is exposed to spillage or seepage. To correct seal the noted items to the wall.
Found the exterior surface of the spout on the hot water dispenser soiled with mineral build up. To correct clean spout and clean on a schedule to preclude accumulation.
Found the handles on storage cabinet in the storage and employee break area missing. To correct replace missing handles.
(Critical) Found time/temperature control for safety (tcs) food, a carafe of cream under a time as a public health policy without 4 hour time control mark. Pic corrected by discarding cream, provided a fresh carafe with cream and marked logsheet to indicate time carafe was placed and will be pulled out every 4 hours.
(Critical) Found an opened gallon of unpasteurized apple cider in the 1 door under the counter cooler. Employee corrected by relocating apple cider to break room cooler to take home as unpasteurized juice is not allowed in a licensed facility.
Found a stack of coffee filters stored on shelf without protection. To correct store coffee filters in a more protected manner such as a covered storage container.
Asked employee how coffee urns with spouts are cleaned. Employee explained they are cleaned in the 3 compartment sink and spouts are flush out. Corrected by educating employee to follow manufacturer's directions, that is the spout needs to be taken apart and all surfaces brushed cleaned (washed, rinsed, and sanitized).
Found the floor under pallets, edges and corners in the back storage area soiled with coffee beans. To correct thoroughly clean floors and keep clean.
Found the ceiling above the coffee roaster surrounding the vents and duct work with exposed surfaces. Found the entrance area of the back side room wall with exposed surfaces. To correct properly repair ceiling and wall and eliminate exposed surfaces.
Found the bathroom ventilation fan in the unisex restroom not working. To correct repair ventilation fan.
Found no thermometer in the back room 1 door worktop cooler and a broken thermometer in the front area 1 door reach in cooler. To correct provide thermometers in all coolers.

Found the back prep area with shelves made of particle like boards. To correct seal particle like boards to be nonabsorbent.

To correct either show there is a backflow prevention device or install a backflow preventor with intermediate atmospheric vent (asse 1012 or 1022) on the water supply line of the espresso machine.
