(Critical) Found ready to eat (rte), time/temperature control for safety (tcs) food, egg rolls and fried chicken nuggets without 7 day (day prepared + 6 days) datemarks in the basement walk in cooler. Pic corrected by having employee mark egg rolls and fried chicken with datemarks. Pic has been instructed to monitor and ensure employees are datemarking appropriate items. ,

(Critical) Used a chlorine test kit and found no chlorine residual in the dishwashing machine. To correct call for repair and either wash, rinse and sanitize dishes or provide a sanitizing step until dishwashing machine is repaired and fully functional. ,

Found the light in the walk in freezer without light shield. To correct provide light shield.

Found the handle of the ice scoop laying on top of ice in the waitstation ice bin. To correct store ice scoop in ice with handle up.

Found no handwashing sign in the ladies and mens public restroom. To correct provide sign reminding employees to wash hands at all locations where they may wash hands.

Found crates of dented cans without label. To correct provide sign indicating dented cans, return to supplier for credit.

Found ceiling tile in the basement missing. Found holes where previous paper towel dispenser was secured to wall. Found the tiled floor in the walk in cooler damaged with missing tile. To correct repair/replace ceiling tile, wall, and tiled floor to be smooth, durable, and cleanable.

Observed food in freezer stored in plastic grocery bags. To correct discontinue using plastic grocery bags and replace with food grade storage bags.

Found the top of the roaster soiled with accumulation. Found the hood filters in the roast hood soiled with dusty buildup. To correct clean as soon as possible, and clean on a more frequent schedule.

Observed the presence of roach in the basement handsink area. Pic states they have monthly service and provided a statement. To correct keep areas clean and dry, in good repair and continue pest control treatments.

Found the ceiling vent covers and surrounding areas in the kitchen soiled with dusty build up. Found grease on the walls on the side of the cooking hood. Found the floor under the cooking line and steam table soiled with build up. To correct thoroughly clean floor and clean on a more frequent schedule.

Found seasoning ingredients by the handsink in the kitchen not protected from splash. To correct install a splash shield or other means to protect ingredients.

Found cases of single use utensils on the basement floor. To correct store cases of utensils on shelf at least 6 inches off the floor.

Found the middle door of the 3 door prep cooler misaligned and hard to close. Found the bottom of the mixing bowl not smooth. Found the strainer used in the lobster tank rusty and worn. To correct repair/replace cooler door, strainer and mixing bowl.

Found old broken equipment and utensils in the basement storage area. To correct remove equipment and utensils no longer needed for operations.

Found no paper towels in the basement handsink area. To correct provide paper towels and keep stocked.

Found the fan covers of all coolers soiled with dusty accumulation. Found the top of the roaster soiled with accumulation and build up. Found the cooking hood filters soiled with greasy build up. To correct clean all noted areas and clean on a schedule to preclude accumulation.

Found food stored in plastic grocery bags in the reach in freezer. To correct store food in food grade storage bags.

Found baking sheet trays of recently fried chicken cooling on the prep table in the basement. Found recently marinated and seasoned ducks cooling on the basement prep table. Pic corrected by having employees place chicken and duck in the walk in cooler for rapid cooling. Pic has been reminded that tcs food must be cooled from 135°F to 70°F in 2 hours, and then from 70°F to 41°F in 4 hours.

Found the wall on the edges of the cooking hood soiled with greasy accumulation. Found the floor under the cooking line and steam table soiled with heavy accumulation and build up. To correct thoroughly clean as soon as possible and clean on a schedule to preclude accumulation.

Found mop left in dry mop bucket in the back kitchen area. To correct after completing mopping task, hang mop to properly air dry.

Found containers of food ingredients and seasonings next to handsink without protection. To correct either relocate food items or install a shield to better protect ingredients. Found the bulk bin containers in the basement missing covers/lids. To correct replace missing bulk bin container lids.

(Critical) Found the pop nozzles and diffussers of the pop machine in the waitstation soiled with build up and accumulation. Found the interior edges of the nut containers soiled with build up. Found the roasting hooks and skewers hanging by wall in front of the roaster soiled with debris. Pic corrected by having employee wash, rinse, and sanitize all noted utensils. Pic has been instructed to monitor that utensils are properly cleaned.

(Critical) Found numerous dented cans on the ready to use shelves in the basement storage area. Pic corrected by having employee place dented cans in a container for return to supplier for credit.

Observed dishwasher working in dishwashing area not wearing hat. To correct provide hat and remind employees to wear them.

Found food items stored in grocery bags in freezers. To correct store food in approved utensils, such as commercial food grade storage containers and bags. Found rusty scissors used to cut, trim foods. To correct discontinue using rusty scissors and replace with utensils that are durable and rust resistant.

Found frozen ducks thawing in standing water in the 3 compartment sink. Pic corrected by turning water on, so ducks were thawing under running water.

Found a container of serving spoons and ladles stored with handles down. To correct store ladles with handles up or in a flat container with handles in one direction to minimize contamination.

Found a covered container of hot and sour soup cooling in the 2 door reach in cooler. Pic corrected by having employee divide soup into 2 containers and place uncovered containers in the walk in cooler to rapidly cool.

Found the floor under the cooking line equipment soiled with heavy greasy build up and accumulation of debris. Found the floor (under equipment, edges and corners) in the waitstation and basement soiled with accumulation of debris. Found the walls in the basement prep area and through out basement soiled. To correct thoroughly clean floors and clean on a more frequent schedule to preclude accumulation.

(Critical) Found time/temperature control for safety (tcs) food, a container of rice 70°F, and a container of cooked vegetables 70°F for soups left out on counter top above and around steamtable. Pic corrected by discarding rice and cooked vegetables, and has been instructed to monitor that tcs food is left in cooler at 41°F or lower, or in steam table at 135°F or above.
