(Critical) Pic in bar and pic in kitchen not able to effectively demonstrate minimum food safety requirements. Bartender and cook (only 2 working food employees) have not been trained in proper sanitizing procedures, employee health requirements, foodborne illness prevention, proper hot and cold holding temperatures, and cook does not know proper cooking temperatures of raw meats. Temporarily corrected violation by educating food employees on basic food safety principles. Staff indicated that there was minimal training when they were hired by owner. If food employees do not have a minimum basic knowledge of food safety when the facility is open for business, your facility cannot remain open. The owner/supervisor of food operations (jim moceri??) needs to call me (carl walczesky) immediately at 734 222-3872 so we can discuss this inspection. I will return for a follow up inspection to ensure basic food safety operations are being met at any given time facility is open for business. Jim indicated that bar mgr (kris) will be taking serv safe class as soon as possible and both of them will be taking a more active role in managerial oversight of facility. To correct, please have all food employees fill out forms 1 and 2 within 10 days and return to me as soon as possible. Follow up site visit 2/10/09: employee health forms have been distributed to all food employees and bartenders. Employees have been notified of employee health requirements and are in process of completing forms. (Critical) Observed chlorine bleach solution in 3 compt sink at 600ppm or more. Excessive bleach concentrations can become toxic when applied to food contact surfaces. Please read manufacturers directions and mix accordingly. Check solution with test strips to verify concentration. Corrected by educating cook on proper sanitizing procedures and demonstrating proper 3 compt sink set up. Remixed sanitizer to 150-200ppm as per manufacturers directions. Critical corrected.

All food and beverages must be stored in a clean dry location and stored a minimum of 6 inches off of floor at all times.
