Provide proper date marks for these foods. Also, revise your standard operating procedure (sop) for date marking and provide me a copy

Observed the receiving plumbing from the food prep sink to be in need of cleaning now and more frequently in the future

(Critical) Observed multiple ready to eat, potentially hazardous foods (rice drink, tres leche dessert, fresh cheeses, deli ham & turkey) without a use-by date. Provide use-by date stickers for these foods to ensure they are not remaining too long in the establishment

(Critical) Observed 2-3 one dozen containers of raw, in-shell eggs that were purchased from a neighbor of the owner who has laying hens. These eggs are not from a licensed/inspected food production facility and are not an approved food source. These eggs may not be utilized in a restaurant. The eggs were discarded. Purchase replacement eggs from an approved commercial source

(Critical) Observed several food items that were beyond their last day of use: a cooked beef filling (11-26), and deli meat (11-21). Corrected by discarding. Ensure your rte, phfs are discarded at the end of the seven day use period

Observed two dirty sheet trays resting on top of the hand washing sink basin at the dish washing station. Please keep the hand washing sink accessible at all times. Corrected by removing the trays

Observed aluminum foil food containers and re-usable plastic containers stored upright on a shelf above the wooden prep table. Please store these items either inverted or in a bag/container to protect them from misc. Contamination

The floor tile was removed from the bathroom. Please provide a smooth and easily cleanable surface in this area (the owner will either use commercial linoleum tile or seal the concrete to finish this floor
