(Critical) I found the chicken nuggets and grilled cheese sandwiches in the hot box at 119*f. Must be holding food at 135*f or greater. The hot box was not working properly. Air temp in box was only 120*f. Do not use this hot box until repaired. I will be back in 3 weeks to verify it is working. Food was re-heated in oven since it was not out of temp for more than an hour.

(Critical) I observed a cold pasta salad at 55*f in the upright cooler. Pasta was cooked off this morning and not brought down to below 41*f before adding further ingredients. Staff need to quick chill cooked pasta. Suggest using ice to achieve this. Corrected by chilling pasta salad down in freezer and changing cooling methods of pasta. Use cooling chart i left you.
