All of the sanitizer buckets and the sanitizer at the 3 comp sink were well below 50ppm. Staff need to keep them at 100ppm and not lower than 50ppm. Use a set amount of water every time and determine amount of bleach needed for that set amount of water to get to 100ppm. Corrected.

Organize the basement area when you first enter into basement. Need to get stuff up off the floor on racks.

Folks need to change out the sanitizer solution more often. I found it well below 50ppm.

The cutting board out in the front service area is excessively grooved and needs to be replaced.

Your exhaust hood is not capturing all of your smoke from the fryers. Have it looked at to see if it is working properly.

Keep the bins you store clean utensils in routinely cleaned. The bin with lids in them is dirty.

The sanitizer levels in the buckets and sink were below 50 ppm. Keep at 50-100 ppm. Showed staff proper levels while here.

The cutting board on the sandwich prep cooler is excessively grooved. Also, some of your smaller boards are grooved as well. Grind down the grooves or replace these boards.

(Critical) I found the coffee cream at 65*f and past the 4 hour window to discard and start with a clean pitcher. Staff need to be aware of times and discard aprropriately. Corrected by discarding.

(Critical) Repeat violation 3 out of the last 4 inspections. Administrative conference required. The under counter dishmacine did not reach temp again. Do not use this machine. Owner stated that she is going to take this unit out and use disposable cups only. I will need to come back after the conference to confirm the unit has been removed.

Mop must be hung up after uses to facilitate rapid drying.

Repeat violation 2 times. Paint the raw particle board shelves in the back storage room.

Repeat violation 2 times. Provide light shields and end caps on lights that are missing them in the basement.

Repair the walk in freezer as there is condensation leak coming into the unit.

Replace the damaged large roller dry goods bin.
