(Critical) I observed 9 cans of mandarin oranges that were bulging. Staff need to be sure to check cans and discard bulging cans. Corrected by doing such.
(Critical) Hot dogs found piled too high in two containers in the steamer and temped at 116 -126 degrees f. Hot dogs are potentially hazardous and must be held hot at 135 degrees f or above. Corrected by discarding hot dogs and or cooling hot dogs on sheet tray to reheat on grill to 165 degrees f as ordered. Today is coney day.

The shelf ledges in the upright freezer on the make line need cleaning. Clean now and place on a more frequent cleaning schedule
Hood filter missing from the hood. Replace missing filter for proper ventilation
(Critical) Raw egg wash stored on top shelf next to biscuts and above tortillas. Keep raw eggs stored away from bread products such as biscuits and tortillas and other ready to eat foods. Corrected by reorganizing these in use storage shelves/cart so that raw foods are properly stored

Light bulb shields are cracked and or broken in the upstairs storage area. Replace broken light shields for proper protection of bulbs. Light bulb shields missing in the corridor where bread and ice machines are located. Provide a shield for this fixture for proper protection of the bulbs.
The cover for the waste receptacle in the employees restroom is missing. Provide a cover for the waste receptacle in order to minimize attaction for insects and rodents.
Assorted foods uncovered in the freezer. Keep all foods covered for proper protection while in storage.
Assorted cartons of foods in the walk in freezer on the floor. Keep all foods stored a minimum of 6" above the floor to allow access for routine cleaning.
The knife storage rack is broken and cracked and no longer cleanable. Replace with a new storage rack that is smooth and cleanable. The hood filter is missing from the hood. Replace hood filter for proper ventilation.
(Critical) The prep/gyro unit was found to be holding assorted potentially hazardous foods at 45 - 52 degrees due to excessive ambient air heat in the kitchen at 97 degrees f. Potentially hazardous foods must be maintained at 41 degrees f. Corrected by discarding all foods elevated above 50 degrees and relocating all foods to a unit capable of holding at 41 degrees f or below and discarding if not consumed within 4 hours. Corrected.
Corned beef in cooler at 47 degrees f due to improper cooling. Two together in one tub. Cooked earlier in day within 6 hours of cooling, mostly cooled in freezer but placed back into unit prior to reaching 41 degrees. Separate on sheet trays to finish cooling down to 41 degrees within one more hour. Corrected.
Cardboard in the walk in cooler on the floor is not approved. Use duckboard or equivalent that is removable and cleanable.
The drainline for the condensate in the walk in cooler is disconnected from the copper line that drains to the sewer. This line is not properly conenected and goes into a larger line, providing an airbreak prior to the sewer line. Permanently connect this line so tha tit cannot separate from the rest of the drainline and drip onto foods stored below the line. Further wrap the condensate line in insulation after the drainline is directly connected.
Gyro/prep unit found at elevated temperature with assorted ph foods elevated to 45-52 degrees f due to ambient air temperature in the kitchen. Reduce product and store back ups in refrigerated storage units that are not in use. Temporary measure to maintain ph foods at 41 degrees f. Long term consider remodel of ventilation system to remove excessive heat from the kitchen.
