(Critical) Found ware washing occurring at the 4 comp sink in the wrong order. Found wash in bay #1, sanitize in bay #2, rinse in bay #3. Corrected - educated staff on the proper set up for ware washing: w/r/s. Staff corrected the set-up at the time of this inspection

(Critical) Found the 4th bay of the sink which is designated for handwashing to have a bucket with dirty cloths and scrubbies in it, and the pedestal fan was placed in front of the sink making it inaccessible for handwashing. Corrected - staff was educated on the requirements for a hand sink in that nothing is to be stored in or in front of the sink; that it must be accessible for handwashing at all times. Bucket of cloths and the fan was moved at the time of this inspection

(Critical) Found pitchers of milk with thermometers used for steaming milk to have an accumulation of old crusty milk residue on the pitchers and thermometers. Corrected - staff thoroughly cleaned the pitchers and thermometers at the time of this inspection. Staff was educated about the requirement to clean these pitchers and thermometers every 4 hours while they are in continual use

(Critical) Found no paper towels at the bathroom hand sink. Corrected - paper towels were restocked at the bath hand sink at the time of this inspection

Found that the required mop sink variance request has not yet been submitted. As discussed at the last routine inspection on 1/16/13, since there is no mop sink in the establishment, a variance is to be requested to use the toilet for mop water disposal. To correct - email the request for variance to use the toilet for mop water disposal within 30 days (august 11, 2013) to : bernbeckd@ewashtenaw. Org

(Critical) Found all 4┬░Food thermometers to be in need of calibration. Corrected - all thermometers were calibrated at the time of this inspection. Because the thermometers are used constantly for foamed milk, they are likely to need calibration often. Check calibration of thermometers on a more frequent basis

(Critical) Found gallon jugs of milk and quart of half and half holding at 48* f. In the front display case. Corrected - gallon jugs of milk and opened quart of half and half were discarded. Temperatures of phf must be checked regularly to ensure proper temp is being held. There is adequate refrigeration in the reach-in unit for all phf used in this establishment

Found the front display case holding at 48* f. The display case was being used for gallon milk jugs due to a problem with the low boy unit. To correct - have the display case repaired as needed to maintain 41* f or less if storing potentially hazardous food items such as milk and cream. Do not use this unit for phf until it can consistently hold food items at 41* f or below

Found shelf under blenders and side of ice machine to be in need of cleaning. To correct - clean these surfaces now and keep on a more frequent cleaning schedule

Found single service items stored without wrapper(cups). To correct - store all single service items in original sleeves. These were old cups - no longer used - should be removed and or discarded

Found sanitizer level in wiping cloth bucket to high @ > 500 ppm quat. To correct - discard sani and remake to correct concentration of 200-400 ppm quat

Found syrup caddy with accumulation of sticky debris. To correct - clean now and keep on a more frequent cleaning frequency

Found cloth used for wiping steam wand on espresso machine to be wet and only changed once a day. Corrected - pic changed out the wet wiping cloth with a clean, dry cloth and will replace cloth every 2 hours

(Critical) Found 2 opened whipped creams and cream cheese containers that were not date marked. Once opened, you need to post the 7 day use by date. Corrected by doing such.

No quat test papers in the booth. Always keep stocked.
