Observed cracked lid and some worn food containers in dishwash area. Please provide durable, food-grade, smooth, easily cleanable food containers that can withstand repeated warewashing. Owner having a difficult time finding the smaller size containers in the restaurant equipment catalogs; will continue to search; until then will discard domestic food containers as needed
These areas in need of cleaning: tracks on the display cooler, hood filters above donut station front counter, floors under donut station and floor/wall juncture in some areas of kitchen. Please clean now and as often as necessary to maintain in clean condition. Please remove any items under shelving units to make it easier to clean the floors
Observed some fruit flies in rear kitchen dishwash area. Please continue to work with your extermination company to eliminate the flies. Per owner had a plugged drain under the kettle near the dishwash area; plumber could not get out to the site for a couple weeks due to all the rain; insect tech is working with the owner to eliminate the flies due to the temporary water build-up under the kettle which saturated the floor in this area.
Some refrigeration door gaskets in poor repair on prep unit doors front counter. Please replace to provide good seal and so smooth and easily cleanable. Per owner gaskets are on order
(Critical) No paper towels available at rear kitchen handwash sink and paper towel dispenser not operating. Please provide paper towels in a paper towel dispenser at all times at all handwash sinks. Corrected at time of inspection by providing paper towels at handwash sink on cart next to handwash sink. Paper towel dispenser is not operating; please repair or replace (the battery may need replacing).
(Critical) Observed trayed raw shell eggs stored improperly next to the cream cheese in the walk-in-cooler. Please store the raw animal foods below and away from any ready-to-eat food items. Corrected at time of inspection by relocating the cream cheese to a shelf above the raw egg storage shelf. Please review proper raw shell egg storage with all employees.
These areas in need of cleaning: fragel station including the preparation table and floors under prep table, shelves under the fragel display case, handle area and door gaskets on sandwich prep cooler. Please clean now and as often as necessary to maintain in clean condition

Please re-establish the air gap for the wic condensate drain line, currently an air break. The air gap shall be twice the pipe diameter above the flood rim of the receiving receptacle

Corrected at time of inspection: at end of inspection pic located an accurate digital food thermometer. Please locate thermometer for easy use and so all staff is aware of location. Food temperatures in refrigeration units shall be taken a minimum twice daily
Small ziploc food containers used to store and to microwave raw eggs are not an approved container. Please replace with durable, smooth, easily cleanable containers that are sufficient in weight and thickness to withstand repeated warewashing
Ceiling fan covers in both men's and women's restrooms in need of cleaning. Please clean now and as often as necessary to maintain in clean condition

To correct, please clean all these areas now and on a more frequent schedule

(Critical) Observed food contact surfaces of several ziploc disposable containers on clean dishware shelf in 3 compt sink area in poor repair. Containers cannot be cleaned properly as plastic appears to be breaking down. All food contact surfaces of equipment must be in good condition, smooth and easily cleanable at all times. These ziploc containers are not approved for restaurant use as they are not durable. To correct, please remove all ziploc containers and replace with approved nsf containers as soon as possible. (Critical) Observed several containers of rte housemade cream cheese, containers of rte deli meats (ham and turkey) and a container of housemade tuna salad in front prep unit and display coolers with discard dates of 12/19/11-1/2/12. All housemade potentially hazardous rte foods (including sliced deli meats) must be used or discarded within 7 days (day 1 is prep/slice date).
