(Critical) A sock is being used for spices that are used for the beef noodle soup. As discussed new clean socks are not approved for this purpose. Use approved food contact surfaces such as stainless tea steepers, cheese cloth or prepackaged spices. Prepackaged spices good for steeping one time use were provided at time of inspection. Sock with spice was discarded. Corrected

(Critical) Chicken cooked this am found sitting on top of prep area at 92 degrees f and beef cooked this am found sitting on top of prep unit above submerged containers in shallow bowl at 60 degrees f cooling. Properly cool smaller quantities in uncovered shallow bowls in the prep unit and place small amounts of chicken and beef to be used during lunch rush in a container that is submerged in the top of the prep unit. Corrected by discussion changing into smaller containers to expedite the cooling process. All foods will be consumed by end of lunch rush. Food is always discarded if not consumed. Made daily

The bulk flour was not labelled on the side of the container. Properly label the side of the container to identify the product and to avoid mix up.

Leak at the hot water knob for the food prep sink. Repair leak

The following non food contact surfaces need cleaning. The gaskets on the prep unit doors, under the handles on the prep unit doors, the hood filters, sides of equipment, fryer cabinets and the seam between the wok and the fryer. Clean now and place on a more frequent cleaning schedule.

Improper methods of cooling just cooked chicken and beef at both room temperature and the beef sitting on top of the prep unit above submerged containers of food. Place bulk into shallow bowls uncovered to cool in the prep unit and small quantities in stainless containers on top of prep unit to both cool and use during lunch rush. Refill into once the food in the container is used up

Cardboard boxes are being used as tubs to store foods in. Grocery bags used for food storage are not approved. Use approved food grade tubs that are smooth and cleanable and approved food storage wrap.
