Rice scoop found in water in container on top of steamer at 103 degrees f. Keep scoop stored in hot water that is a minimum of 135 degrees f.
Assorted foods found stored on the floor in the walk in freezer. Keep all foods stored a minimum of 6" above the floor to allow access for routine cleaning
The following non food contact surfaces need cleaning: hood , hood filter, outside of 5 gallon containers that store sauces, handles on the coolers. Clean now and place on amore frequent cleaning schedule.
(Critical) Brocoli was being placed into milk crates for storage. The milk crates are not food grade approved as they have crevices that make them not easily cleanable. Use a food grade approved plastic liner inside the milk crate for future storage. Eliminate direct contact with the milk crate, etc. Corrected by using an approved food grade liner plastic bag.
(Critical) Handsink was blocked by several five gallon containers placed in front of the handsink. Corrected by relocating the containers away from the handsink so that the handsink is accessible for routine handwashing at all times.
(Critical) The interior of the white rice warmer was in need of cleaning on the inside of the lid. Clean now and palce on a more fequent cleaning schedule. Corrected by cleaning at time of inspection
(Critical) The slicer was found to have excess debris on it and had not been cleaned after last use. Properly clean the slicer after each use and retrain employees regarding proper cleaning technique and required frequency for cleaning. Correct by cleaning now and place on a proper cleaning schedule as required.
Scoop for dispensing food from the steam table found in water that was 100 degrees f. Temperature of the water must be 135 degrees f or above. Provide proper temperature of water.
Clean utensils were found stored in a dirty utensil tub. Keep utensil tubs clean and place on a routine cleaning schedule. Togo containers are being stored on a shelf in the mechanical room. Reorganize the dry storage area and place all paper products and togo containers in the dry storage area for proper protection
The hood filters need cleaning. Clean now and place on a more frequent cleaning schedule.
Condensate is leaking in the walk in freezer and forming icicles in the freezer onto the foods. Repair leak and remove the icicles.
The door to the dumpster was open at time of inspection and dumpster was full to the opening. Keep doors/lids closed to minimize attraction for insects. As this is a shared dumpster, it may be necessary to have an additional dumpster if this one is full before the pick up date. Correct by keeping doors/lids closed and providing an additional dumpster as needed.
Wiping cloths found on the counter not in sanitzing solution inbetween uses. Keep wiping cloths in a sanitizing solution of 50 ppm cl to disinfect the cloth towel inbetween uses.
Foods were being placed in both deep containers and covered while hot into the walk in cooler during the cooling process. Leave foods uncovered and use shallow pans/sheet trays etc. To help expedite the cooling process. All foods were temped above 135 degrees f at time of inspection. Foods are required to cool from 135 to 70 in two hours and from 70 to 41 degrees f in an additional 4 hours. Correct by using methods above to help expedite the process.

To correct install a vacuum breaker device on the water supply line down stream of all shut off valves and atleast six inches above the flood rim of the disposal unit or you may install an rpz device on the water line leading to the disposal. , observed the water line leading to the disposal located at the drain board of the three compartment sink without a vacuum breaker installed to protect the water supply line from potential back siphon contamination. To correct install a vacuum breaker device on the water supply line down stream of all shut off valves and atleast six inches above the flood rim of the disposal unit or you may install an rpz device on the water line leading to the disposal. 1/28/2011°Follow up inspection verified proper installation of an atmospheric vacuum breaker install on water supply line to the garbage disposal. This item was corrected by installation of vacuum breaker as required.
