(Critical) Found the dish machine not sanitizing. Dispensing equipment seems to need repair/priming. To correct - have dish machine serviced asap. Do not use dish machine until repaired and sanitizing at proper concentration. In the meantime, 3 compartment sink must be set up for manual dishwashing. This must be corrected within 10 days. I will perform a follow-up inspection on/about june 5, 2013 to verify correction
(Critical) Found an open bag of shredded lettuce and an open gallon of milk that were not date-marked. Corrected - these items were dated as lettuce was opened on 5/21/13°For taco night, and milk was opened today. This is the second time in the last three routine inspections that this violation has been sited. As such, you are required to completed a risk control plan within 10 days and fax it to my attention at 734-222-3930
(Critical) Found no thin mass, needle tip thermometer available as required by the new 2009°Food code. To correct - provide required thermometer. Also found several locations where lexan containers, hotel pans, and steel bowls stored upright on shelves, also exposed to dust, debris and splash. To correct - always store clean pots, pans, and containers inverted to protect against accumulation of dust, debris and splash
Found two stalls in the women's restroom without a covered receptacle. To correct - provide a covered receptacle for all stalls in the women's rest room

Baked spaghetti dish was said to have been just removed from the freezer for thawing. Corrected - pic discarded the food items. All ready to eat foods must have a prep and/or consume by date on the item. When thawing, the date the item was removed from the freezer must be written for clarification
Found cased beer to be stored directly on the floor in the wic and other areas of the kitchen. To correct - provide dunnage rack or shelving to store cased beer to facilitate floor cleaning, especially in the moist environment of the wic

To correct - all clean untensils, pots and pans must be stored inverted to protect from splash and dust
(Critical) Found 5 open tubs of cool whip whipped topping. None of the tubs had an "opened on" date. 4 of these tubs of topping were moldy. Corrected - pic discarded all tubs of topping at the time of this inspection

Found two, battery powered probe thermometers in both the kitchen and the bar that were not working because they need battery replacements. To correct - replace batteries in both thermometers. Note - there was a metal stem thermometer food hot foods ( 50 -500 degrees f) and an thermocouple -type thermometer that is calibrated correctly and can be used for both hot and cold foods. Use this thermometer until the batteries are replaced in the metal stems
Found no anti-choking poster in establishment. To correct - obtain anti-choking poster from the american red cross and post in kitchen area

(Critical) There is a temporary smoker set up outside for cooking ribs and chicken as part of the moose fundraiser. This will occur 1x month throughout the summer. You must provide a portable handwash station with dispensing container for water, catch basin and soap and paper towels for proper handwashing in the cooking area. Corrected by setting up a portable handwash station at time of inspection
(Critical) Opened container of milk found in the upright display cooler with a may 15 date for sell by. Product was unmarked with a consume by date. All potentially hazardous , ready to eat foods must be marked with a maximum consume by date not to exceed 7 days including the day the product is opened or prepared. On certain foods but not milk the date on the container may be the accepted use by date. Corrected by discussion and discarding the milk
Food employees including both inside and outside food personnel were found not be wearing proper means of hair restraint. All food employees must wear proper means of hair restraint such as ball caps, hair nets etc. In the case of limited prep such as bartending only you may tie hair back, however when handling food or utensils hair must be properly restrained.
Assorted domestic equipment in the facility including microwaves, chest freezer, corck pots, roasters etc. Replace with commercial equipment when in need of repair.
(Critical) The following non food contact surfaces need cleaning the fryer cabinets and interior of the keg cooler at the bar.
Vinegar in spray bottle found unlabelled. Properly label spray bottles as to their contents to avoid misuse. Use an approved food grade bottle.
Domestic equipment found in the vacility including chest freezers in basement that are not in use, crock pots, roasters etc. Replace with commercial equipment when in need of repair. Do not place the ones in the basement back into service.
The microwave needs cleaning. Clean now and place on a more frequent cleaning schedule.
