All phf (including housemade sauces and dressings) must be consumed or discarded within 7 days (day 1 is prep date). (Critical) Observed bottom of slicer (near blade guard) with an accumulation of dried on food debris. Blades were disassembled after last use, but staff did not wash and sanitize base of slicer and other slicer components. All food contact surfaces of food equipment must be washed, rinsed and sanitized after every use and be clean to sight and touch. Critical corrected. , observed several dirty knives in clean knife rack in back kitchen area (knives were not cleaned and sanitized after use).
