Observed true upright display cooler in serve line area cold holding at 50f (unit was unplugged). Only items in cooler were freshly prepared rte salads (with cheese) and freshly scooped garlic butter. No phf was left in cooler from last night per pic. Please ensure all coolers are maintaining 41f or below at all times before placing any phf into cooler. Pic corrected by plugging cooler in at time of inspection. Cooler now maintaining 40f

Observed bin of plastic to go single service cups with an accumulation of coffee debris next to coffee machine in serve line area. To correct, please store all single service items in a clean, dry location and protect from sources of contamination

(Critical) Observed pan of commercially prepared italian dressing and pan of barbecue sauce next to grill on cooking line that had an accumulation of food debris in sauces. (sauces were adulterated). Pic stated that sauces are used for glazing rte meats. Upon further investigation, discovered that sauces were prepped and used all day yesterday then left out overnight and had not been changed this morning. Pic stated that night shift forgot to discard used sauces. This procedure needs to be changed immediately! all sauces/glazes that are exposed to phf (like meat) must be changed every 4 hours maximum to prevent bacterial growth. Upon closing, these sauces and glazes must be discarded (not kept for next day). Pic corrected by discarding adulterated sauces. Managers (both night and morning) must take a more active role to ensure employees are following proper food handling procedures and verifying that phf food is not "missed. " critical corrected.

(Critical) Observed blender in bar area not easily disassembled for cleaning (blade to bottom of pitcher interface). Appears bottom blender cap was threaded incorrectly when assembled. Pic had to use tools for disassembly. All food contact portions of equipment must be easily disassembled so employees can wash, rinse and sanitize all portions of equipment after use. If you need tools to disassemble blender, some employees may not take the time to properly clean this blender. If problem persists, either repair or replace blender. Pic corrected by educating employees on proper blender assembly procedures at time of inspection. Recommend having only bartenders or other specified persons assemble blender after dishwashing to minimize cross threading problems

(Critical) Observed several packages of raw shrimp being stored/thawed in bowl of standing water on the drainboard of prep sink in back kitchen area. Internal food temperature was 72f. All phf must be stored at 41f or below at all times. If thawing raw shrimp in prep sink, must be under cool running water or under refrigeration at all times. Once raw meats are thawed, must be prepped immediately or transferred to refrigeration to avoid bacterial growth. Do not leave raw phf at room temp. Pic corrected by discarding shrimp. Also discussed phf prepping and cold holding procedures with employees including proper thawing methods critical corrected.

Observed interior of both microwave ovens on cooking line with an accumulation of debris. To correct, please clean now and on a more frequent schedule

Observed all floor drains in kitchen and bar area with an accumulation of mold and debris and creating insect harborage conditions (observed a couple of drain flies in floor drain under dishwasher). To correct, please clean out all floor drains in kitchen/bar area with warm soapy water now and on a more frequent schedule. If insect population grows and becomes a nuisance, please call licensed pest control company for drain treatment

Observed floors and walls in dry storage area soiled with old food debris. Also observed floors under dry storage racks soiled with debris and a large cobweb in corner (appears floors have not been swept or mopped in several days). Please clean now and on a more frequent schedule. , observed floors under grill and deep fryers soiled with a heavy accumulation of grease and food debris. To correct, clean now and on a more frequent schedule.
