(Critical) Observed lunch phf rte meat and cheese at the sub making station on the food service line at 48 degrees f. Pic states lunch meat and cheese was removed from cold holding one hour ago and placed into sub making station. 6th size hotel pan holding lunch meat and cheese is nested (double panned) inside a full size hotel pan on the cold holding unit. Cold holding unit measured temperature is below 41 degrees f. At several locations. Pic corrected during inspection by eliminating double panning by replacing full size hotel pan with holding bars and placing 6th size pans containing lunch meat and cheese into back unit. Measured temperature of meat and cheese at 38 degrees f

Observed flourescent ceiling light missing protective cover. Correct by replacing cover

Observed condiments for the taco meal without sneeze protection. Correct by providing a sneeze guard, relocating to the salad bar, or by providing individual sealed service packets

At the self service food line observed apples on display in an open basket. Correct by placing apples under a sneeze guard such as the salad bar.

Observed doors and lids on several trash dumpsters in back of building left open. All dumpster doors and lids must be closed at all times to prevent entry of unwanted pests and insects. To correct, please work with custodial staff to ensure all dumpster lids and doors are shut and tightly sealed after use
