(Critical) The 3c sink was set up with coffee strainer part of coffee maker in the santize compartment of the 3c sink. However there wasn't any sanitizer in the 3c sink. Corrected by adding sanitizer to proper concentration fo 50ppm cl.
The door on the reach in cooler is out of alignment and is not closing tightly. Once closed there is a gap. Realign so that the door is tight fitting to make the unit most efficient.

The reach in freezer at the front counter was found to be holding ph foods at 25 degrees f partially thawd out. Adjust or repair so that ph food are kept frozen solid.
The bottom of the reach in cooler section of display case was holding foods at 47 degrees f. The unit is functioning properly and maintaining ph foods up top at 40 degrees f. The bottom is used to store commercial dressings, condiments and olives only. Recommend removing or shortening mesh matting used to line shelves on display section as it is impeding air flow to the bottom of the unit.
The tri color pasta salad was found in large pot in cooler at 73 degrees. The pasta was still within the 2 hour time frame to reach 70 but it is not clear if it would reach 70 in the cooler covered in half full in large pot. Cool rapidly to 70 in two hours and 41 in an additional four hours. Use ice and water to cool pasta down immediately to proper temperature prior to placing into cooler. Corrected by discussion and taking product placing into 3c sink into ice water. Was temped at 55 degrees f by end ofitwo hour time frame by changing cooling method.
