(Critical) Observed blender cup (blade to cap interface) on clean dishware shelf in dishwashing area with an accumulation of stagnant water and sticky food debris (blender cup was not disassembled before washing, rinsing and sanitizing yesterday). All fcs of equipment must be washed, rinsed and sanitized after every use and must be clean to sight and touch. Pic corrected by disassembling blender cup, then washing rinsing and sanitizing all blender cup components at time of inspection. Pic to train all staff on proper dishwashing procedures as well. (Critical) Observed an individually portioned container of rte tuna fish in upright display cooler in prep area with a use by date of 6/20/14. Also, several other containers of rte tuna fish in same cooler with no use by datemark labels on containers and prep dates were unknown). All potentially hazardous rte foods must be used or consumed within 7 days (day 1 is prep date). To correct, need to rotate stock more often and discard all expired food as needed. Also, staff need to be consistently datemarking all phf in coolers with 7 day datemark label (day 1 is prep date). Observed several partially opened in use smoothie cartons in pan on counter in prep area directly under paper towel holder for handsink (food is in splash zone). All food must be stored in a clean, dry area and not exposed to potential sources of contamination. To correct, please relocate food to approved area or relocate paper towel holder as soon as possible
