(Critical) Observed small containers of rte commercially prepared tuna and chicken salads in randall ric/drawer cooler in front prep area with an internal food temp of 47-49f. Cooler is not functioning correctly. All phf must be cold held at 41f or below at all times. Do not use this cooler to store phf until properly repaired and inspected by the washtenaw county health dept. Pic corrected by discarding tuna and chicken salad and taking cooler out of service. Facility does not keep large quantities of tuna and chicken salad, so pic stated that they will not use this cooler to store any phf and will start using upright cooler in same prep area for future storage. Critical corrected.

Observed randall ric/drawer cooler in front prep area not able to hold a temp of 41f or below. Pic took cooler out of service at time of inspection and will not be using to store phf. If wanting to put cooler back into service, must have it repaired and inspected by the wash. County health dept.

Observed interior of dishmachine (top of door ledge) with an accumulation of black sticky debris. To correct, please clean now and on a more frequent schedule
