Note: hot dogs and sausages in this hot holding unit were at 135°F and above.

Found a covered container of soup cooling in the 2 door reach in cooler. Pic corrected by removing cover to allow soup to rapidly cool. Pic has been reminded that tcs food must be cooled from 135°F to 70°F in 2 hours and then from 70°F to 41°F in 4 hours.

Pic states bottom heat venting plate was blocked not allowing hot dogs to be held at 135°F or above. Pic corrected by re-heating hot dogs to 165°For 15 seconds, and has been instructed to monitor that hot dogs are re-heated to a minimum of 135°F and held at 135°F. I will return to verify that hot holding unit is functioning properly and holding hot dogs at 135°F or above. ,
