(Critical) Observed all pop nozzles and pop nozzle barrels on pop machine in dining area soiled with mold and debris. All pop nozzles and pop machine components must be washed, rinsed and sanitized every 24 hours and must be clean to sight and touch. Pic corrected by properly washing, rinsing and sanitizing all pop nozzles and pop machine components at time of inspection

Observed brooms and cleaning supplies stored next to and leaning against shelf were clean knives are being stored. All food and clean utensils must be protected from sources of contamination at all times. To correct, need to relocate brooms and cleaning supplies or move knives to approved location as soon as possible (recommend obtaining knife rack)

Observed handle on del-field upright cooler in prep area broken leaving a sharp edge. To correct, need to repair/replace broken door handle as soon as possible so all surfaces are smooth and cleanable

(Critical) Observed large pan of rte cooked rice in upright cooler in prep area with internal food temps ranging from 55-62f. Rice was made last night per pic. All phf must be cooled from 135f to 70f within 2 hours and from 70f to 41f or below within a total of 6 hours. To correct, please utilize shallower pans and ice baths/ice wands before placing food in upright cooler. Pic stated correct cooling procedures, but there is no food thermometer in facility to measure internal food temps. Pic corrected by discarding rice. Also educated staff on proper cooling methods and procedures. Critical corrected.

(Critical) Observed several pre portioned to-go containers of housemade rte hommous and portioned side salads (with sliced tomatoes) in small tabletop display cooler on front counter with internal food temps of 51-53f (cooler is not functioning correctly). All potentially hazardous rte foods must be cold held at 41f or below at all times. Do not use this cooler to store phf until properly repaired and then inspected by the washtenaw county health dept. Pic temporarily corrected violation by discarding all hommous and side salads at time of inspection. I will check this violation at follow up inspection. Correct within 10 days. ,

Observed no test strips (quat or bleach) in facility to measure sanitizer concentration. To correct, please provide as soon as possible

Observed small randall tabletop display cooler on front counter not able to hold at 41f or below. Cooler taken out of service at time of inspection. If wanting to utilize this cooler to store phf in future, will need to have repaired and then inspected by washtenaw county health dept. Correct within 10 days

(Critical) Observed pans of lentil soup and vegetable soup in tabletop soup warmer near front counter with internal food temps of 54-65f. Soups were removed from cooler and have been in unit for 30 minutes per pic. Please remember that the soup warmer is designed to hold temperatures not rapidly reheat. All phf must be rapidly reheated to 165f or more within 2 hours. Need to reheat on stove or in microwave before placing soups in hot holding unit. (Critical) Observed several 5 gallon buckets of housemade rte hummus, soups, sauces and dressings in upright cooler in prep area with no consume by datemark labels. All housemade potentially hazardous rte foods must have a 7 day consume by datemark label (day 1 is prep date). All mentioned food items were freshly prepared within the last 3 days per pic, so pic corrected by properly datemarking all housemade hummus, soups, sauces and dressings at time of inspection. Observed cases of water and bags of single service items stored under unprotected sewer lines in basement storage area. All food and s/s items must be protected from sources of contamination at all times. To correct, please relocate food and s/s items to approved location or install shielding under sewer lines to intercept any potential leaks in line

Observed basement floors in dry storage area in basement constructed of bare plywood. To correct, need to install cleanable tile, or paint/finish wood so it is smooth and cleanable

Observed the interior of the convection oven in prep area soiled with burnt on food debris. Also observed the interior of auto fry deep fryer unit in cooking area soiled with grease and debris. To correct, need to clean these areas now and on a more frequent schedule

Observed the following areas in prep area in need of cleaning: interior of victory upright cooler (accumulation of sticky debris), interior of delfield cooler (accumulation of debris), interior of self-serve cappuccino machine in dining area (accumulation of food debris). To correct, please clean all these areas now and on a more frequent schedule

Observed floor drains in prep area and under 3 compt sink with an accumulation of mold and/or debris. Also observed floor in basement storage area with an accumulation of debris. To correct, please clean now and on a more frequent schedule

Observed ice scoop laying on ice in ice bin near front counter. All utensils must be stored in a protected manner. Do not store ice scoops laying on ice as they are a potential source of contamination (from employee hands). To correct, please store all ice scoops with handle extended up and out of food product

Observed holes in wall above 3 compt sink. To correct, please repair as soon as possible so all surfaces are smooth and cleanable

Observed the door on the convection oven in prep area broken (door not able to close all the way) and the door handle on the delfield upright cooler in prep area broken. To correct, please repair/replace these items as soon as possible

(Critical) Observed several pans of raw chicken and raw beef in 2 door upright cooler in prep area stored above bags of rte pita bread. All raw animal foods must be stored below and away from rte foods at all times to help prevent cross contamination. Pic corrected by reorganizing cooler and placing all raw meats on bottom shelves and pita bread on top shelf. Critical corrected

(Critical) Observed 3 chemical spray bottles hanging on edge of dry food/clean dishware rack across from 3 compt sink (chemicals were stored directly above salt and pepper packets). All chemicals/toxics must be stored below and away from food and clean dishware at all times to help prevent contamination. Observed several boxes of food, drinks, and single service items stored on floor in basement and cases of water and teas stored on floor in dishwashing area. All food must be stored in a clean, dry location and stored a minimum of 6 inches off of ground at all times. To correct, please obtain more shelving or dunnage racks as soon as possible

Observed handsink in prep area blocked by trash can. Also observed fan cord wrapped around prep area handsink faucets. Also observed bottle of water stored in handsink in dishwashing area. All handsinks must be fully accessible at all times for proper employee handwashing. Do not store items in or around handsink at any time.

Observed upright cooler door gasket in prep area wrapped with clear tape. All equipment surfaces must be smooth and cleanable at all times. To correct, please remove tape and clean surface as soon as possible

Observed case of arizona tea stored under handsink sewer line near 3 compt sink. Also observed single service items (plastic knives, napkins) stored under handsink sewer line in front counter area. All food and s/s items must be stored in a clean, dry location and stored in a protected manner. To correct, please relocate these food and s/s items to an approved location as soon as possible
