(Critical) I found that the plate inside the oven has a lot of dried on melted cheese and food debris on it. Food contact surfaces must be kept absolutely clean. They must be frequently washed, rinsed and sanitized. This is critical in preventing the spread of harmful food borne illness causing bacteria onto food. Corrected at the time of inspection. The plate was removed from service for cleaning.

Staff could not locate a proper metal stem thermometer for checking food temperatures. Monitoring food temperatures is critical to your food service operation. Ensuring safe food storage at proper temperatures is the number one best way to prevent food borne illness. Make sure that there are several accurate food thermometers in the restaurant at all times.

The area under the pannini press needs to be cleaned. Ensure that work areas are frequently cleaned.

Provide a refrigerator thermometer for the small refrigerator with the small microwave oven on top of it. Use it to check the temperature of the unit, which should be 41 degrees f. Or below.

The bottom shelf of the stainless steel work table needs to be cleaned. Non-food contact surfaces like these must be frequently cleaned. Frequent cleaning is critical to maintaining sanitary working conditions in the restaurant.
