(Critical) Cole slaw was found at 44*f to 46*f in a small "red bull" cooler. This cooler is not designed to hold any potentially hazardous foods. You must hold cole slaw in your large coke cooler. Corrected by storing in coke cooler, which is holding product at 39*f.

(Critical) A hose was connected to a water line that has no baclflow device on the line. You need to obtain water from the mop sink connection, which has the proper backflow device on the faucet. I want this water line taken out and capped off within 2 weeks. I will be back to verify it has been taken out and capped off on july 3, 2013.

(Critical) I found rice at 103*f and gravies at 122*f on the steam table. Steam table water was only at 124*f. You cannot stock foods in steam well until water in steam well is ~150*f. You need either arrive earlier to turn on unit and give it enough time to pre-heat or heat water up in your rice cookers to boiling and use that water in your steam well. Corrected by re-heating product to above 135*f and stocking hot water in steam wells.

The fan gaurds and area around compressor has mold and dirt on them. Thoroughly clean this area and put on a routine cleaning regimen.

Please organize the back area. Get all wiping cloths in a covered container and out of sink basins. Organize this entire location.

You need to remove all old caulk and re-caulk the 3 compartment sink to the wall.

The floor/wall coving needs to be repaired/replaced in the area of the 3 compartment sink.

The exhaust hood and filters needs to be cleaned more often, as there is dust build-up.

Utensil rack is located too close to the paper towel dispenser. Either more the untensil storage rack or move the paper towel dispenser so it is directly above the handsink.

You need to get an oven thermometer for your hot hold case in the back prep area.

(Critical) Hot water is not available at the handsinks. This facility has 2 hot water heaters and the one that provides for the handsinks is not working. Repair or replace asap. I will be back on jan 4th to re-inspect for this!!!

(Critical) The portioned cole slaw in the front cooler are outdated (1/9). You need to discard foods as they expire. Corrected by discarding.

(Critical) The new ice machine has a drain line that is not air gapped. You need to have it permanently air gapped within 10 days. I will be back to re-inspect in 2 weeks.
