(Critical) I observed raw shell eggs stored right next to several loaves of bread in the 2 door upright cooler. To control the risk of cross contamination, always store any raw animal foods seperated from any ready to eat foods. Breads should be above the eggs. Corrected by doing such.

(Critical) I found bread with mold growing on it in the 2 door upright cooler. Be sure to audit your foods closer and discard any old product. Corrected by discarding.

Repeat violation 2 times in a row. Once again, i didn't detect any sanitizer in your wiping cloth bucket. You need to use your test strips to assure levels of chlorine are at 50-100ppm.

(Critical) No sanitizer detected in 3rd compartment of dishwash sinks and staff were washing dishes. You need to fill the 3rd sink up and keep sanitizer concentration at 50-100ppm. All kitchenware needs to be fully immersed under sanitizer water for 60 seconds. Corrected by doing the above.

(Critical) The sanitizer concentration in wiping cloth bucket was found in excess of 200ppm. Keep at 50-100ppm and use test papers to verify concentration. Corrected by adjusting to 100ppm.
