Observed ceiling tiles directly above rethermailizer oven in cooking area with an accumulation of mold (from past ceiling leak). To correct, please replace all damaged/moldy ceiling tiles as soon as possible

(Critical) Observed can opener blade and gear area with an accumulation of sticky black debris (appears some can opener surfaces are damaged and cannot be cleaned as thoroughly as required). All can openers must be washed, rinsed and sanitized every 24 hours and must be clean to sight and touch. Since can opener cannot be easily washed, rinsed and sanitized, recommend can opener be replaced as soon as possible. Pic corrected washing, rinsing and sanitizing can opener at time of inspection. (Critical) Sliced turkey in trays was delivered at 11:50 am. Immediately placed in refrigerator. Temped approximately 1/2 hour later and found to be at 46 - 47. 7 degrees f. Potentially hazardous foods must be maintained at 41 degrees f at all times including transport. This is indicative of inability to maintain cold holding temperatures of 41 degrees f or below during transport. Food is transported in coolers with 3 ice packs but this school is at the end of the delivery route so food has been out of temperature control for over 4 hours. In addition food will still be in the temperature danger zone for several more hours while in the upright cooler which is maintaining a 40 degrees ambient air temperature. Other foods in the cooler were temped at 41 degrees f or below. Corrected by discarding food and discussion with heather, food service director that cold potentially hazardous foods to be delivered to schools at the end of the route will be overpacked with ice to maintain food at 41 degrees f or below. Changes to delivery willbe implemented immediately. Alternative food will be delivered for tomorrows service. ,

The pic is not certified in food safety. A certified food safety manager is required to sumbit certifcate via fax once obtained to 222 -3930. Scheduled for next week to take class. Correct within 90 days
