(Critical) Observed several pans and lids on clean dishware shelves in back kitchen area greasy to the touch (had to wash my hands after handling). All pans and lids must be washed, rinsed and sanitized after use and must be clean to sight and touch. To correct, dishwashers need to be more thorough when manually washing dishes. Pic corrected by re-washing, rinsing and sanitizing all soiled pans and lids at time of inspection. Violation corrected.

All wash, rinse and sanitize solutions in 3 compt sinks must be maintained cleaned and free of food debris at all times. (Critical) Observed open boxes of taco meat, rte cheeses, chicken pot pies, sliced tomatoes, cooked vegetables and baked beans on wic shelf with an internal food temp of 48-50f. Sealed boxes of taco meat, cheeses and sour cream in same cooler had an internal food temp of 41f. Pic stated that wic was not working properly when she arrived this morning. All phf must be cold held at 41f or below at all times. If your wic is not cold holding at 41f or below at any time, you must take internal food temps and discard all food that is not 41f or below immediately! if food is still at proper temps, then you must transfer all food to another cooler until broken cooler is properly repaired. Pic called for repair at time of inspection. Do not use wic to store phf until properly repaired and inspected by the wash county health dept. Correct within 10 days. I will check this item at follow up inspection. Pic temporarily corrected by discarding all out of temperature meat, cheese, chicken pot pies, sliced tomatoes and cooked vegetables and beans. (Critical) Observed 4 pans of rte cheeses and 2 pans sliced tomatoes in cold table in main prep area with an internal food temp of 50-60f. Staff stated that all cheeses were transferred from wic this morning (wic was not cold holding at 41f or below when i arrived for inspection). Pic stated she was not aware that employees were using food from wic for morning prep. All phf must be cold held at 41f or below at all times. If wic is not functioning properly, all staff must be aware of this fact and be instructed not to use out of temp food. Pic corrected by discarding all pans of cheese and sliced tomatoes. Critical corrected.
