Temporarily corrected at time of inspection: hot water at 3-comp sink found at 89°F and at rear handwash sink at 83°F; after approximately 30 - 45 minutes the hot water recovered to >110°F at all sinks. Spoke with district mgr (zak) and he stated that a/c scheduled to be repaired in 2 days. Cannot leave doors open will waiting for repair. Due to high humidity inside restaurant, pic sent another employee to store to obtain box fans for kitchen and dining rooms

(Critical) Observed employee spray out a raw chicken inset pan (with raw chicken juices) with spray arm over 3 compt sink directly in close proximity to clean dishware and utensils on shelf in 3 compt sink area and drainboards. When employee was spraying out pan, i observed possible cross contamination between raw chicken pan and clean dishware. Spraying also contaminated all surfaces of 3 compt sink area and employee did not clean and sanitize after spraying. Need to change this practice immediately! employees cannot spray out raw chicken containers in 3 compt sink in close proximity to clean dishware. To correct, please retrain all cooks and dishwashers on proper dishwashing procedures and dangers of cross contamination.
