(Critical) Used a chlorine test kit and found the chlorine sanitizer concentration above 200 ppm. Pic corrected by remixing sanitizing solution to about 50 ppm and used a chlorine test kit to verify proper concentration.

(Critical) Asked pic how dishes and utensils are washed, and pic stated dishes are washed in soapy water, dipped in sanitizer, and dried with towel. Corrected by educating pic that dishes and utensils are to be washed in soapy water, rinsed in clean water, dipped in sanitizer and air dried.

Found the sliding door rails of the countertop soiled with accumlation of debris. Found the cooler top surfaces soiled with dusty build up. To correct clean door rails and top surfaces of cooler.

(Critical) Used a test kit, and found chlorine sanitizer solution in sanitizing bucket at a low concentration (used to sanitize thermometer). Employee corrected by adding more chlorine to sanitizer, to manufacturers specification (50 ppm minimum and 200 ppm maximum).

Ask employee dishwashing procedure, employee explained dishes are washed in a soapy bleach solution, rinsed and sometimes air dried. Corrected by explaining proper dishwashing procedure that is dishes are to be washed in soapy water, rinsed in clear water, sanitized in a sanitizing solution, and then air dried. Pic has been instructed to monitor and retrain employee on proper dishwashing
