(Critical) The dishmachine was found dispensing less than 50 ppm chlorine. Do not use dishmachine until unit is serviced and it is determined to be dispensing 50-100ppm chlorine. Staff need to be using test strips on a daily basis to assure proper chlorine levels are reached. I will be back in 2 weeks to verify your machine is working properly.

(Critical) No chlorine test papers were available at the dish machine. You need to keep them stocked and be sure someone is using them to verify the dishmachine is sanitizing at 50-100ppm. Use at least once a day. I will be back in 2 weeks to verify you have them.

(Critical) 3 containers of ceasar dressing were found past the use by dates(one had a u/b date of 1/20 and two had a u/b date of 1/26). Staff need to be assigned to audit dated product on a daily basis to assure expired foods are discarded on time. Corrected by discarding.

(Critical) Chafer fuels were found stored in the chafer pan lids when packed for delivery to events. To control the risk of contamination of food from the fuel cans, store the fuel cans in the bottom of the crates. Corrected by making that change.

The char grill on the cook line is very dirty and needs to be cleaned better and more often. Also, the interior top of the bakery microwave was observed dirty. Be sure staff properly clean.

You need a covered waste receptacle in the female restroom.

The walls and pipes behind and around the dishmachine are dirty. Staff need to be cleaning this area more often and better.

Get rid of the raw wood shelf that you use to store the cofffee urns on. Obtain approved racks that also have 6" clearance to the floor.

A substantial number of your florescent lights are either not shield at all or are missing the end caps. Provide the required shields and end caps by the correction date.

I observed damaged knife handle and a food processor handle taped up. When equipment/utensils are damaged discard. Be sure to obtain commercial grade utensils/equipment that is durable and can withstand heavy use and multiple washings.

Several opened bagged and boxed dry ingredient product observed not covered in the main kitchen prep area. Keep opened product in covered manner.

2 of the cooks did not have a hat on when i arrived. Staff working with food prep need to have hair restraints on. Corrected.

(Critical) Several items requiring date marking found without dates. Items included opened, unsliced ham, turkey and salami, cream cheese, goat cheese, mascarpone, milk and cooked pasta. Be sure these items are date marked. Corrected by dating.

You need a new light shield in the "finish" walk in cooler. One of them is cracked.

Most of your exit doors are in need of door sweeps to seal off the gaps to keep pests out. You also need screens for your windows that were open.

Clean the walls and pipes behind the dishwash tank. Routinely keep cleaned.

Provide handwash reminder signs at all handsinks.

Garbage wasn't emptied in coffee area from day before. Empty all garbage before leaving for the day so pests are not attracted.

Move the rack that clean utensils are stored on that is directly next to the handsink in the bakery area.

Kitchenware neds to be air dried before stacking together. I found pans still wet that were stacked together and washed on previous days. You need more racks in dishroom to air dry your dishes on.

I found cell phones and keys stored on food prep line. Staff need to keep their personal items stored in designated employee area.

The interior of the microwave found dirty in bakers area. Clean after uses.

I observed small flies in the garbage at the doffee prep area. Garbage wasn't emptied. Have your pest operator focus on small fly mitigation.

Clean the fan covers of the room fans that have accumulated dust on them.
