(Critical) In the basement, observed the food slicer with raw beef and beef fat on the guards and landing plate. Corrected during the inspection by properly cleaning these surfaces. (Critical) Observed the handwashing sink in the basement and the handwashing sink in the kitchen used for dishwashing. These sinks are for handwashing only. Temporarily corrected during the inspection by educating employees about using these sinks for handwashing purposes only. This violation has been cited on 4 of the last 5 routine inspections. Pursuant to the washtenaw county procedures for enforcement of the michigan food law you are required to attend an administrative conference at the health department office. An administrative conference notice was provided during this inspection

In the kitchen observed the condensate line from the new air conditioner to terminate in the dish rinsing sink. Correct by relocating the condensate line termination to an approved location

In the bsmt storage area observed the interior of each of the refrigerators with an accumulation of grime. Correct by cleaning now and on a more frequent basis. This is a repeat violation.

In the basement at the mop sink observed the sink to be full of soiled water and two mops resting in the water. Correct by hanging the mops dry between uses and draining the mop water.

(Critical) Observed the following food contact surfaces not clean to the sight and touch: basement 1. Food slicer with raw beef and beef fat on the guards and landing plate. 2. On shelf underneath food slicer table observed a tub of utensils used for food preparation. These utensils and the tub have bits and pieces of old food and debris. 3. The kimchee cutting boards are unclean to sight. One cutting board is nailed to a stool. Food debris has collected under the nail. Corrected during the inspection by properly cleaning these surfaces. (Critical) In the basement observed potential cross contamination: 1. In a refrigerator observed two cartons of raw eggs stored over top of ready to eat vegetables. 2. In another refrigerator observed a container of raw chicken stored over a containers of raw beef pic corrected during the inspection by relocating the eggs and chicken to an approved location. (Critical) Observed several instances of employees not washing hands when indicated by the task they completed: 1. Observed two employees handling dirty dishes returned from the dining area. These employees then began preparing food without properly washing hands. 2. Observed employees cooking food who handled raw eggs continue cooking without properly washing hands. 3. Observed employees in the basement handling raw beef without properly washing hands prior to beginning another food handling task. Corrected by discussing proper handwashing with the pic. Item corrected.

During the inspection the pic indicates he will remind employees to only use the sink for handwashing. ****this violation has been cited on 3 of the last 5 routine inspections. Pursuant to the washtenaw county procedures for enforcement of the michigan food law you are subject to an administrative conference at the health department office. However, previous to this inspection stephen kang indicated he planned to install an additional sink in the kitchen area. This will provide two sinks on the main floor of the facility. The sink is on site. Plumbers have been contacted for bids. The following timeline must be followed or enforcement action will be initiated: 1. Immediately cease other activities in the handsink except handwashing. 2. No later than november 10, 2014 provide a copy of an executed performance contract for the installation of the new sink. 3. No later than november 30, 2014 the second sink shall be installed and functional. ,

In the basement dry storage area observed food (including bulk sauces) stored below unshielded sewer lines. The sewer line and floor above the food have water stains indicating a history of leaking. Correct by either relocating the food or by providing approved shielded on the sewer line. Some items appear to have be relocated since the last inspection but have now migrated back under the sewer line. This is a repeat from several previous inspections. Enforcement action may be initiated if this violation is observed during future inspections.

Observed food stored without protection from contamination: 1. In the basement observed several packages of food stored on the floor. 2. On and under the stairs observed two large storage containers of rice without lids. 3. In the kitchen observed an in use rice cooker on the floor correct by relocating each of these items to a protected area

In the basement observed a large container of chopped cabbage being processed. The container is on the floor. Also the ceiling above the container is not smooth and easily cleanable. Correct by providing an approved table for this operation or by relocating the preparation to another area

Observed several cutting board surfaces with deep gouges and dark staining. Especially the boards used for making kimchee. Correct by resurfacing or replacing these boards so they are smooth and easily cleanable

In the basement observed the following surfaces with an accumulation of food debris: 1. Under and behind most of the equipment observed an accumulation of sand and food debris. 2. On the staircase walls and stringers 3. The doors between the different areas in basement 4. The walls around the dishwashing sink and food prep area by the slicer correct by cleaning now and on a more frequent basis to prevent the accumulation of debris

At the basement three compartment sink observed the drain pipe from the sink to have slipped into the receiving drain, eliminating the air gap for the sink. Correct by reestablishing the air gap

Observed the following areas in need of repair: 1. At main cook area above newly installed a/c unit observed missing ceiling tiles correct by replacing tiles 2. In basement bathroom observed deteriorating wall on area by toilet correct by repairing or replacing. 3. In the basement at the dry storage observed peeling paint and holes in the wall correct by repairing the wall and painting

Observed two large packages of beef sitting on the counter. The pic indicates these packages are thawing. The beef is 38 degrees f or less. Pic corrected by relocating the beef to a refrigerator. All phf shall be thawed as outlined above and discussed during the inspection

In the basement observed an amana and a ge refrigerator without an ambient air thermometer. These refrigerators are used to store potentially hazardous foods. Correct by installing an ambient air thermometer in each unit. This is a repeat violation from the last inspection

Enforcement action may be initiated if this violation is observed during future inspections. This violation was observed during the last inspection. Therefore, a risk control plan needs to be developed and submitted to the health department for approval. A copy of risk control form was provided to mr. Kang during the inspection. Item corrected

(Critical) In the dining room at the coke dispensing machine, observed the soda dispensing nozzles with a heavy accumulation of grime and black debris. The nozzles do not appear to have been cleaned per manufacturer requirements. Pic corrected during the inspection by disassembling the nozzles and properly cleaning and sanitizing the nozzles. Observed the facility has no employee on staff who is currently certified under a personnel certification program accredited by ansi, utilizing the conference on food protection standards. Correct by providing proof of certification for a member of staff who is regularly engaged in food preparation on a full time basis. Item shall be corrected within 6 months.
