Observed missing and split gaskets on two door upright reach-in-cooler. Please replace to provide good seal and so smooth and easily cleanable

Observed mop closet with excess clutter. Please get rid of any items not used in the operation and maintenance of facility and organize remaining items.

Please re-establish the air gap for ice machine drain line; one of the drain lines (metal) currently has an air break. The air gap shall be twice the drain line pipe diameter above the flood rim of the receiving receptacle. The other drain line (white pvc) has an air gap but is not centered over the drain. Please center and eliminate styrofoam cup

Washed and unwashed produce stored in same bowl. Please separate unwashed produce (bananas & oranges) from washed produce (apples & pears)

(2) please provide paper towel dispenser for rolled paper towels at handwash sink or relocate existing paper towel dispenser closer to handwash sink

(Critical) The metal stem food thermometer was reading 6-7f too hot. Corrected by recalibrating the thermometer

(Critical) Observed a cutting board and a knife stored in the bottom of the hand washing sink basin. Corrected by removing these items to a buss tub for dirty dishes

Observed customer self service pretzels provided without a dispensing utensil available. Provide a pair of tongs or other appropriate dispensing utensils for service if this food

(Critical) Observed sliced cheese and cut melon (potentially hazardous foods) in hotel pans out at room temperature (67 to 73f) on table tops in the dining room. Corrected by discarding these foods. These foods were provided in the morning for the women's only golf time (wednesday mornings). In the future, consider utilizing time as a public health control for these foods not held under refrigeration--contact me for details regarding the development of the required policy.

(Critical) Observed an open quart of 1/2 & 1/2 (with an unknown date of opening) stored in the two door upright cooler. Corrected by discarding. Observed several plastic containers of cold salads (tuna, chicken, potato) from monday (two days prior) to be in the cooler without date marks. Corrected by marking these foods with the day of preparation

(Critical) Observed the +/- one half gallon of quat sanitizer to be mixed way too strong (400 ppm +). Corrected by using 1/2 of a tablet for 3/4 of a gallon of water. The label directions require 1 tablet for 1. 5 gallons of water

1) observed the two ceiling vents to be dust covered. 2) observed the floor to be unclean (plastic forks, bottles of juice, cloth towels, etc. ) under the ice making machine, and the two coolers on wheels. Thoroughly clean these areas now and on a regular basis

Observed the two hotel pans of food (fruit salad, and cheese & crackers) and at least two bowls of peanut butter out for service on tables in the dining area without container covers or sneeze guards.

(Critical) Found ready to eat (rte), time/temperature control for safety (tcs) food, a container of tuna salad, and 2 opened cartons of half and half cream, without 7 day datemark in the 2 door reach in cooler. Pic corrected by providing 7 day datemarks (day opened/prepared + 6 days). Pic has been instructed to monitor that employees are datemarking appropriate items.

(Critical) Used a quat test kit and found the sanitizing bucket concentration at a very high level. Pic corrected by adjusting sanitizer concentration to manufacturers specification of 200 ppm. Pic has been instructed to review and monitor that employees are mixing sanitizing solution properly.

Found a roll of aluminum foil left on counter top, not in it's protective box. To correct store aluminum foil roll in a more protected manner.

Found the floor (under equipment, edges and corners) soiled. To correct clean as soon as possible, and clean on a more frequent schedule.

Observed mop in mop wringer left in mop sink. To correct hang mop when mopping has been completed.
