Store raw foods so that they are not above or in close proximity to foods that are ready to eat in order to avoid potential for cross contamination of rte foods.
(Critical) Date marking is not in compliance. All ready to eat potentially hazardous foods held cold over 24 hours must be datemarked. This includes cole slaw, deli meat, feta cheese, sliced tomatoes (if last over 24 hours), etc. . Maximum date for marking is 7 days including day product is prepared or removed from package. If frozen then 6 days from removal of freezer. You may use the expiration date of 7/6 days or the day it is prepared or removed from freezer or both. However you must be consistent.
Raw wood surfaces to storage area above the office must be sealed painted or polyurethaned s that they are smooth and cleanable.
The grill shelf attached to sid of the equipment is in need of cleaning. Clean now and place on a more frequent cleaning.
