Please clean the interior of the microwaves more frequently at joes and at the bakery. Also, you need to clean better under the convection oven in the bakery.

I observed a few small flies in the bakery near the convection oven. Have your pest company focus on this area and be sure to keep food debris out of the floor drain crocks.

The floors of the walk in freezer need to be cleaned more often.

(Critical) The dessert display case was found holding cannolis at 46-51*f, creme brulee at 51*f, and other cream based pastries at 48*f. Must be holding 41*f or less. Do not use this cooler for any potentially hazardous foods until it is repaired. All out of temp ph pastries were discarded. Staff need to be taking temps inside coolers at least 3 times a day to assure holding product at 41*f or less. I will be back in 2 weeks to verify unit is fixed.

(Critical) The smoothie maker and the blender pitcher rinser drain lines are not air gapped. They both are required to be air gapped. I will be back in 2 weeks to verify they are air gapped.

Keep spray bottles of water labelled in the bakery.

Please discontinue using overturned milk/pop crates as storage racks. Get them on racks that have at least 6" of clearance to the floor so you can easily sweep and mop the floors.

(Critical) The meat slicer in the bakery area was not cleaned thoroughly or properly after the last use. Staff need to disassemble parts and run through dishtank. The blade and the stand need to be cleaned in place by using detergent, then rinsing with clear water rags and then follow with sanitizer. Corrected by doing such while present. Suggest getting brushes so assist with cleaning the slicer.

(Critical) The vanilla and chocolate soft serve mix was found at 45-48*f. Must be holding at 41*f or below at all times. Staff need to use thermometer to check temps of this everyday. Do not use this unit until repaired and i must re-inspect it.

(Critical) I found ham sandwiches and quiche past the use by dates (4/4 and 4/5). Staff need to audit dates daily and discard expired foods. Corrected by discarding.

Pic temporarily corrected by placing whipped topping in another working cooler. If whipped topping is to be stored in this cooler it must be repaired/replaced to hold tcs food at 41°F or lower.
