Staff need to use test papers to verify when strength drops below the required 200ppm and make up a fresh batch at that time. Also, you need to change out the wiping cloth buckets when it drops below 200ppm. Corrected by doing such.

Wiping cloth out at espresso machine. Have a seperate wiping cloth bucket for this station and keep wiping cloth in sanitizer solution between uses to disinfect the cloth towel.

A couple of boxes of to go items was observed on the floor in the basement storage area. Keep on shelves at least 6" off floor.

(Critical) I found yogurts at 46*f in the open case cooler. Potentially hazardous foods must be held at 41*f or less. Re-locate yogurts to the bottom shelf where temps are below 41*f. Corrected by discarding.

Zip lock storage bags are single use items only. Do not save them for re-use!

(Critical) A bag of lettuce and english cukes were stored directly next to raw shell eggs on bottom shelf. Store produce and all ready to eat foods above raw animal foods. Corrected by doing such.

(Critical) Sanitizer strength in spray bottle was at ~500ppm. Needs to be at 200ppm. I would like you to begin using sanitizer buckets and keep wiping cloths in them between use. Have one for the dining tables and one for the back of the house. Corrected by making up buckets.

The florescent lights in the basement storage area are not shielded. Provide light shields and end caps or purchase shatterproof lights.

(Critical) I found yogurt at a temperature of 58 degrees f. Located in the front display case unit. This case can not be used to store phf's, unless it is capable of constantly maintaining a temperature of 41 degrees f. Or below. Use food thermometers to check phf temperatures. Corrected at the time of inspection. The yogurts have been relocated to another refrigerator

Provide 2-3 new metal stem food thermometers, use them to frequently check food temperatures.
