(Critical) Observed facility not sanitizing dishware correctly as i measured 800+ ppm of chlorine bleach in 3 compt sink. Please remember that bleach concentrations can become toxic at excessive levels. To correct, please follow directions on manufacturers directions when mixing sanitizer and verify concentration with proper test strips as needed. Pic corrected by remixing sanitizer compt to 100ppm at time of inspection. Violation corrected.

The chlorine test strips are currently stored in the desk. They must be easily available for checking the chlorine sanitizer level in the third compartment of the three compartment sink.

The food thermometer is stored in the desk. The thermometer must be available in the sandwich prep area, so that the storage temperatures of the various items in the prep tables can be checked.
