(Critical) Observed no chlorine bleach test strips in facility to measure sanitizer concentrations in 3 compt sink or sanitizer spray bottles. Pic stated that test strips are supposed to be delivered to restaurant later today. To correct, please obtain as soon as possible. I will check this item at follow up inspection. Can e-mail me picture of test strips in restaurant or i can return in 10 days to verify. ,

(Critical) Observed sanitizer concentration in both spray bottles in dishwashing area over 500ppm of bleach. Please remember that bleach can become toxic at excessive levels. To correct, please mix all sanitizer bottles as per manufacturers directions and verify with test strips as needed. Pic corrected by remixing both spray bottles to 50 ppm of bleach at time of inspection. Violation corrected

Observed no employee handwashing sign at handsink in mens restroom. To correct, please provide as soon as possible

Observed wet mop stored in used mop water bucket in back kitchen area. All mops need to be hung up after use to allow for proper air drying

Observed several wet pans on clean dishware rack in dishwashing area (some pans collecting water on edges). All pans and utensils must be completely air dried before storing/stacking on clean shelf.

(Critical) Observed open beverage cup stored on top of pop syrup boxes in back kitchen area. Also, observed employee water bottles stored in wic with no straw (twist type cap on bottle). All employee beverages must be covered at all times and equipped with a straw or other sipping device so employee hands do not touch the lip of the bottle (where employees are drinking from). Pic stated that jimmy johns corporate policy does not allow employees to use lids and straws on personal beverages in the kitchen. I have not seen this policy demonstrated at other jimmy johns stores in washtenaw county and pic did not have a copy of this policy anywhere in facility. If jimmy johns has a policy which is in direct violation of the fda food code, we will need to consult jimmy johns corporate directly for clarification. Please fax copy of this procedure to carl walczesky at 734 222-3930 as soon as possible. Pic corrected violation by discarding open cup and water bottle in wic. Critical corrected. Pic will need to allow straws and lids on personal beverages and train employees as per the food code unless a variance or other permission is granted by our department.
