(Critical) Observed 2 stock pots of rte grape leaves on shelf in wic with internal food temperatures of 58-70f (grape leaves were prepped 8 hours ago per pic). All phf must be rapidly cooled from 135f to 70f within 2 hours and from 70f to 41f or below within a total of 6 hours. Need to utilize and spread out grape leaves in shallower pans before placing in wic. Pic corrected by discarding grape leaves at time of inspection. Violation corrected

Improper cooling methods observed for cooling grape leaves. Cooked potentially hazardous food shall be cooled within 2 hours from 135°F to 70°F and within a total of 6 hours from 135°F to 41°F. Corrected at time of inspection by spreading out recently cooked ( found at 143°F) grape leaves out on sheet trays instead of stacking in third pans. Placed in wic uncovered
