(Critical) Observed staff not sanitizing pans and utensils properly as i measured 0 ppm of quat in 3 compt sink. Staff need to be changing sanitizer more often and mix as per manufacturers directions (in this case 200ppm). Pic corrected by remixing sanitizer compt to 200ppm at time of inspection. Observed interior door gaskets on 2 door vegetable cooler in back kitchen prep area in poor repair (gaskets are hanging and held together with duct tape). Cannot use duct tape for to repair commercial equipment as it can accumulate bacteria. To correct, please replace all damaged gaskets as soon as possible. , observed door handle on del-field upright cooler in prep area in poor repair (door handle is broken and pulling up when used). To correct, please repair door handle as soon as possible so all surfaces are smooth and cleanable.

(Critical) Observed covered hotel pan of freshly prepared rte rice in upright cooler in prep area with an internal food temperature of 125-130f (rice has been in cooler for 10-15 minutes per pic). All phf must be rapidly cooled from 135f to 70f within 2 hours and from 70f to 41f or below within a total of 6 hours. Need to utilize shallower uncovered pans and ice baths when actively cooling and before placing food in upright coolers. Pic corrected by splitting up rice into 2 shallow pans and leaving uncovered in freezer. Violation corrected

Observed handsink in employee restroom not sealed to wall. To correct, please seal and/or caulk sink to wall as soon as possible

(Critical) Observed pans of cooked rice, cooked chicken and pork, marinated raw chicken, and housemade sauces in the delfield upright cooler in prep area with internal food temps of 48-51f (unit is not functioning correctly). All phf must be cold held at 41f or below at all times. Do not use this cooler until properly repaired and then inspected by the washtenaw county health dept. I will check this item at follow up inspection. Correct within 10 days. Pic temporarily corrected violation by discarding above foods with unknown prep dates (rice, cooked pork and chicken) and moving freshly prepared items (marinated raw chicken, sauces) to another cooler in back kitchen area. ,

Observed vinyl thermal bag (with dirty bottom) stored on top of fruit and vegetables in back kitchen area. Pineapples were whole and carrots were in a bag, but this is not an approved storage area for vinyl carry out bags. All food must be stored in a clean, dry location and protected from sources of possible contamination at all times. To correct, please relocate bags to another area of kitchen as soon as possible.

Observed several coolers in facility (main prep line) leaking water (interior). Staff have placed pans under leaks to collect water, but water was still observed at bottom of some coolers. To correct, please have coolers serviced and repaired as soon as possible.

Observed delfield upright cooler in prep area not able to maintain 41f or below. Called owner who stated that he has already called for repair and cooler should be repaired this week. Please call me once repair is complete for follow up

Facility does not have a serv safe certified manager. Spoke with robert (owner) and he has signed up for a recertification class on 4/22/11 (saw copy of confirmed registration form). Robert also stated that his chef is scheduled to take class in early april as well. Please fax copy of serv safe certificate to carl walczesky at 734 222-3930 once completed. Must correct within 90 days

(Critical) I observed two canisters of sterno fuel stored on the same shelf over the three compartment sink, next to food service plastic gloves and a container of curry powder. As discussed, at the time of inspection, toxic items, cleaners, sanitizers and disinfectants must always be stored in locations that are completely separate and removed from your food service operations. Corrected at the time of inspection. The sterno has been relocated as directed.

Provide a thermometer in the stand-up refrigerator, located in the rear prep area.

The floor under the three compartment sink, needs to be clean. Clean the floor often to promote good general sanitation.
