(Critical) Repeat violation 2 times in a row. Complete the risk control plan and fax into me within 10 days. I observed cilantro and bags of slaw cabbage on the bottom shelf right next to raw meats and eggs. You need to keep all ready to eat foods above any raw animal foods to control the risk of cross contamination. Corrected by moving cilantro and cabbage above raw product.

You need to provide a latch for your sreen door so it shuts tightly to keep out insects.

(Critical) Observed cans of chafer fuel stored with food contact items in back storage room. Organize your chemical items to all be together and seperated from foods and food contact items. Corrected by moving to safe location.

(Critical) I observed raw meats and eggs next to ready to eat foods in the 2 door upright cooler. Store raw animal product on bottom shelves and not next to any ready to eat foods. Corrected by doing such. You also need to organize your cooler much better and use "first in, first out" practices.

Boxed take out containers stored on the floor. Get them so they are stored at least 6" off the floor.

Go through and remove all things that you do not use for your business and thoroughly organize your your store and storage.

The handsink at the cooking prep area was obstructed by a speedrack. You need to relocate the speedrack so the handsink is accessible.

Once bagged foods are opened you need to put them in covered containers.

You need to purchase food grade storage containers.

Remove the plastic container from the air gapped sink drain line.

Using quat and no quat test papers. Plans to switch to approved chlorine and has chlorine test papers. Use often to assure chlorine levels are at 50-100 ppm.
