(Critical) Rice found at improper temperature in rice cooker which was found turned off from previous evening. Critical corrected: at time of inspection discarded rice found at 110°F. Rice was cooked in rice cooker previous evening but never transferred to rice warmers which are left on all night. Rice in rice warmers maintaining at proper temperature.

(Critical) These food-contact surfaces in need of cleaning: food dividers front grill area and some pop gun nozzles downstairs bar. Not corrected

(Critical) No sanitizer present at automatic warewashing machine. A chemical sanitizer shall be used in accordance with the epa-approved manufacturer's label use instructions and be provided at a minimum concentration. Critical corrected: at time of inspection changed out the empty sanitizer container under automatic dishmachine. Chlorine sanitizer is now being provided at proper concentration. Please re-establish air gap at basement bar ice bin (#1) with black insulated foam covering drain line. The air gap shall be twice the pipe diameter above the flood rim of the drain. Please reattach the ice bin (#2) drain line in basement to the wall; bracket broken. Please extend the drain line for the ice bin (#3) in basement so the drain line terminates over the drain. End of drain lines for all pop gun holders in basement shall terminate over a floor drain

Food packages shall be in good condition and protect the integrity of the contents so that the food is not exposed to adulteration or potential contaminants. Critical corrected: at time of inspection set the severely dented cans aside for return to supplier. A permanent dented can storage area will need to be set up. Cans will be inspected prior to placing on can storage shelf and set aside for return as needed
